    Lemon cupcakes, from a box!
    lol my cousin came over at 2 in the morning and I guess that's what happens when we decide to bake. They came out really good though and I don't usually like boxed mixes.
    We even used canned frosting.

    Ah, so I'm not the only one who bakes in the middle of the night, lol!

    I made pineapple tarts. There's a story to them. I bought a whole pineapple, but of course only eat a little bit every day for a few days, then that's enough for me. My son loves it, but it burns his mouth (though he can have canned, and cooked), and husband doesn't like it at all.

    So I googled recipes for pineapple jam, and it was hard to find a recipe which didn't use other fruits with it and/or used fresh pineapple. Finally found one, it was for pineapple tarts meant to be for Chinese new year - and they were filled cookies, not really tarts.

    Made the jam yesterday, and it turned out great.
    Today, made the pastry - and wow, it's so rich that there was no way I could flatten a piece into a round to add the filling, and press the edges up.
    I ended up making 24 tart shells instead, put in a bit of coconut, then added the pineapple jam before baking.
    Wowsers, they are absolutely awesome! I already had two, lol!

    You know I was brave, made them in front of my four year old. Had her try a black bean. 'Oh yuk momma, I'm not eating those brownies.' When it was cooked and smelling like brownies and looking like brownies she quickly changed her tune. Of course I used a silicone gingerbread shaped pan which may have helped a bit. She wanted more the next day though.

    I was upfront as they may not have tasted 100% like the real thing. It is something we could eat every day though, whereas a real brownie might be once a year for her.

    found 2 small batches of gingerbread dough in the freezer. They are a slice and bake cookie, so easy yo do. Only got about 15 cookies out of the whole thing.

    I have been a bad mom. Normally I back a few times a week, but haven't since last weekend. I made cinnamon buns. Cheated and used the bread machine to make the dough. Normally I try and bake some of the kids lunch snacks but got lazy.

    Lua ,great recipe thanks for sharing,i have tried before and made pumpkin cake with whole wheat flour and it turned up awesome very moist and delish!

    i baked carrot cake with whole wheat flour and raisins today,so good
