This new lower class ticket with Air Canada at least, mostly offers no mileage reward and no changes whatsoever.. something that's already applicable to Air Miles tickets.

Also looks like the Air Canada one charges twice as much for seat selection:

New lowest class $20 - $100 CAD

Well I was 25 over the max 500 for the pepsi and I'm not sure if they allow more than one bonus coupon a day.
I wasn't sure if they claw back over 500 on an item or else I would've bought way more pepsi

no I don't think so. The itemized posting on the airmiles website made no sense at all, so that might be why.

I just picked up the coupons for Manitoba. It says it must be different partners. Would Safeway and Sobey's be considered different partners?
