Now this is very different, and when I first read it, I wondered what the heck it would taste like! Well...I made it and now everyone absolutely NEEDS me to make this for family get-togethers such as this Thanksgiving.
I'm sharing it with you in case you're looking for something different this year...try it...you won't be disappointed!
Carrot Casserole
4 1/2 cups sliced carrots
2/3 cup crushed buttery round crackers (I use more..over a cup..)
3 tablespoons butter, melted
1/2 cup chopped onion
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 1/2 cups milk
2/3 cup shredded processed cheese
Directions
Preheat oven to 350 degrees F (175 degrees C).
Place carrots in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 6-10 minutes. Drain. Meanwhile, in a small bowl combine crushed crackers with 1 tablespoon melted butter. Mix well and set aside.
In a medium skillet over low heat, heat the remaining 2 tablespoons of butter and saute onions until tender. Stir in flour, salt and pepper. Cook for a few minutes, stirring to prevent browning. Gradually pour in milk, stirring constantly. Increase heat to medium and cook until bubbly and thickened. Add cheese and stir until smooth. Fold in carrots.
Pour mixture into a 9x12 inch baking dish and sprinkle with the crumb mixture.
Bake in preheated oven for 20 minutes, or until bubbly and golden brown.This thread is currently associated with: N/A

it sounds really good, but I have to ask what is shredded processed cheese?? Do you mean cheese slices and shred them? If so, wouldn't that be hard to do?

Maizy, I should have written "Velveeta" there. It confused me when I first read it, too...I have no idea why it wouldn't be written that way in the beginning!
And I use more, of course...at least 1 1/2C....too much cheese is not enough! LOL!!

I've never used velveeta-could you use regular block cheese? Or is vevleeta a hard cheese that you can grate?
Love the sound of this, going to make it for my mum's, thanks for sharing lynn!

Snow...Velveeta is a very smooth processed cheese that melts "like butta"
I wouldn't substitute a hard cheese in this...it could get gluey instead of velvety soft.
I'm glad you're trying it out...I HOPE your family likes it!
I also put a bit..ahem...more Ritz cracker topping on!

Thanks for sharing guys a great recipe of carrot guys will you please let me know some other good and healthy recipes here that how to cook these and how these are healthy.

This looks really yummy. I'm not a fan of processed cheese, so I'm going to try it with shredded cheddar. Thanks so much for sharing!

Let me know how it turns out with cheddar, French Lady. I only use Velveeta for 2 recipes, both I rarely make, so I don't see it as a problem. AND LOLOL...I even googled the stuff to make sure it wasn't ... as our daughter says, ... "one molecule away from plastic"!
It's not. hehehe....
