SC Thanksgiving-Christmas Weight Loss Challenge

down 2.1 pounds.... cannot understand how, maybe due to lack of Halloween treats in the house.... but hey, I'M -2.1 this week!!!!

i lost 3lbs... I am pretty happy considering those are the 3lbs that I had previously lost and gained...now I am almost where i started from with this challenge, lol...

I think this week is a bit tougher for me because it's my birthday and I did have one piece of cake, they surprised me at the resto I got to, my dad told the owner it was my birthday, they are friends of mine lol, but it's the going out to supper that is tough. I am going on Sunday with friends. Should be interesting. I did not get ot pick the resto so I have no clue if they have veggie dishes. My DH is in Seattle this week and he is having a tough time finding veggie meals. You would think the west coast is a little more trendy than elsewhere but nope. Steakhouse U.S.A. lol

I said to him don't they know what veggies are. He said they do but they don't eat any.

I know the feeling re:eating out
I usually cave and eat dairy-no gluten or meat still
Salad, fries and nachos ..lol
And some places have gluten free pizza but it is so bad I need the cheese to cover the taste
I had nachos out on Friday night for date night
This Friday out with friends... I am trying to talk them into eating before we go
We are going to a comedy club.. And I will have to have a drink

Trying something new tonight. Stuffed baked potatoes. Baked 2 butternut squash and 6 potatoes. Hollowed them out and rough mashed them separately then folded roughly together with salt. pepper, cinamon, ginger. Sauteed 2 leeks and 2 apples. Then stuffed the skins with the mash and thentopped with the leeks/apple mix and sprinkled some nutritional yeast on top.

Re-bake at 350 for 20-30 minutes, they smell pretty good

maybe cover them with foil because the leeks get a little burned

I made zucchini fries tonight. Pickle slice in an EVOO oiled pan and seasoned with salt and Parmesan cheese! 350*F for 20 min.

Easy and yummy.
