Green Monster Rice (yes I made that up )
2 cups(measure before cooking) brown rice, cooked = about 8 cups
10 diced roasted garlic cloves ( I roast a whole bunch then freeze them in ice cube trays)
toasted sesame seeds (toast them in the pan them put them through the spice grinder, I do these in big batches)
Ginger (dried inthe dehydrator then ground)
pepper
lemon juice (about 2 tblsp)
low sodium soy sauce
1 pkg frozen spinach or fresh if you have it
1 large onion
1 head of celery
6 small zucchini
chop onion, celery sautee in pan( I use water to start them off but you can use oil if you prefer)
add spices
then add spinach, zucchini and lemon juice , soy sauce, add more water if you think it's sticking
then add the cooked brown rice, simmer until zucchini is cooked 5-10 minutes
This dish takes about 30 minutes to prepare and cook

Skanky Bread Pudding
1 loaf bread of your choice
2 large apples diced
3/4 cup raisins
1/4 cup walnuts
2 cups cranberries
cinnamon and nutmeg
2 cups almond milk (regular milk if you like)
2 cups homemade applesauce
2 tblsps of cornstarch
Omit the nuts if you want les calories per serving and add a chopped banana or more cranberries
Combine all dry ingrediants, except cornstarch
combine applesauce, almond milk and cornstarch, stir well
Lightyly spray a 10 x 14 pyrex or other baking dish add mixture and press down firmly
bake at 325 for 45 minutes (30 covered , 15 uncovered)
Serve with topping if you like. I put a little applesauce on top and some almond milk. It's best when warm. Other toppings could be soft tofu mixed with some applesauce, or you can get a low fat whipped topping.
