Great challenge momof5boys, I guess you and I are not the only ones that have freezers overstuffed, I take meat out of my freezer everyday.

Question: For those of you than do canning, I'm wondering if I couldn't take my Europes Best Veggies and transfer them from the freezer to Mason Jars (of course following proper protocals)? Any thoughts ideas, trying to empty my freezers as well and can things that I can.

    why not just eat them?.....

they've already been blanched & frozen.....if you thaw them and then can them.....they'll be realy mushy, especially because veggies need to be pressure canned unless you're pickling them.

Things don't get roatated, then one day you take out those 2 fabulous steaks you bought (about 6 months or more ago), cook them up, they smell and look delish, then you take a bite and they taste like...well @$$. Nada, no flavour at all. Such a waste of money.

Keep up all the great work everyone at eating up all the stashed food and rotating stock. It really does help us save money!
Any beef that I find in the freezer that is a bit on the older side gets chopped up and put into the slow cooker to make a beef tomato veg soup - delish!

Because they would have been processed once already, I think you would end up with mushy veggies that have lost a lot of their food value. It is best to can veggies straight from garden

OK, finally back to carry on with this challenge...yesterday I took out hamburger and red beets. Today my freezer has said good bye to another package of blueberries (for muffins), chopped apples (to make pie), hamburger (to make cabbage roll casserole).

i have a question. how do you freeze your meat? i mean, you buy them fresh right. do you just put it in a ziploc bag or do you buy those vacuuming gadget? if the latter, what brand are you using?

    thanks!

Meat is bought fresh and then I portion it off - I just tightly wrap with Glad plastic wrap but you could use Ziploc bags as well and just make sure the air is squeezed out when zipping it shut. I have never used a vacuum gadget...just another thing to clutter up the cupboards.

a roast is coming out tonight. I'm making friends a proper english roast beef dinner tomorrow night with yorkshire pudding.

My parents are visiting next week so I'll be able to clear a lot more out then! Thank goodness because it is getting pretty scary in my freezer. It is in dire need of a defrosting.

I have one since I freeze salmon. It is a Foodsaver that was on sale at Canadian Tire. Since the bags are a bit costly, I only use it for things that will be stored for a month or longer. London Drugs has had some great deals on the bags though. The Foodsaver came with a canister which I have found very handy to store dried mushrooms in (it`s so hard otherwise to keep them dry here). I`ll definitely get more canisters when they go on sale for a good price.

I've always frozen salmon in large ziplock bags filled with water...so the salmon is frozen in water....and comes out like it was fresh I will either chop the salmon in steaks for freeze in large pieces - either way, it works great.
