What is your favorite stuff to can? For me it is pickles and things like lemon cheese.

Hi Cheekysaver, lemon cheese, never heard of that before, sounds interesting, what is it exactly?
I like canning almost anything, jams, chutney, pickles, relish, salmon, vegetables.
Found some frozen cherries at Superstore last week, so am going to make some cherry jam next. washed and sorted more jars last week, but have been busy working outside in the yard so not doing too much canning.

LOL well Lemon cheese was what it was called back in the day. It is a canned lemon curd. It is sweet and not bitter and has a strong lemon flavor. It has butter and egg in it and a shelf life of about 3 months... that is even going by the book. Here is the recipe http://nchfp.uga.edu/how/can_02/lemon_curd.html

Hi Cheekysaver, have a recipe for lemon curd, not as many eggs very simple, but recipe suggests that you fill jar and freeze this product, have never made this sounds yummy.
Harbie, no don't have a recipe for spicy green beans, good luck recipe hunting.

Kitty77 The curd is nice and full of flavor. It is perfect for on toast or for layers between a cake. The lemon flavor is too strong for something like a lemon meringue pie.... but a layer between cakes and ohhhhh my! If you have someone who doesn't really like super sweet icing you can use whipped cream for the topping on the cake with this stuff in the middle. It will hit the spot... oh geesh i have to go eat something... that made my mouth water! LOL

If you store them in a cool dark place the shelf life is the longest. My parents have a cold basement and their stuff lasts and lasts. I do not and there is a difference in the shelf life.

Dilly beans are one of my favourite pickles. This recipe is delicious: to make them spicy, I would just leave out the dill seed from the recipe and double the chili flakes. Altering the quantities of dried spices in canning recipes is perfectly safe.
If you'd like to prolong the shelf life, I'd suggest adding Pickle Crisp to the brine. I used it when I canned dill pickles a year ago and they're still crunchy.

Ok Lowes does not have canning jars listed... or mason jars, home canning or bernardin... but they normally carry them and price match. If you price match walmart's price and their price is higher they will beat the price by 10% of the lower price.
