had a craving for egg-in-a-hole. Made 2, using 2 slices white bread, ( so bad! ) , but at the end I topped them with some grated Tex Mex cheese! Lid on and it melted so nice over them!

bran muffins and hard boiled eggs. I can make the hard boiled eggs great but it was incredibly frustrating trying to peel them this morning. DH rec'd the least mangled ones, I gave myself the partially mangled and the dog, yep got the other one. Even the dog seemed perplexed with my egg peeling lol

@crafter do you do the " plunge " trick for your hard boiled eggs? I have rare issues peeling eggs anymore.
The moment the timer ends and they are cooked through to your liking, very quickly remove them from the pot,
plunging them into a sink full of ice cold water.
It has to to be done quickly, no lollygagging allowed. Then take a heavy serving spoon, lift each egg out of the cold water,
hit each one to crack the shell all over. Then put each back in the water. Start to peel from the bigger end making sure to grab the
membrane that clings between the egg and shell. Pulling both that membrane with the shell makes it all come off easily.
Hope this helps. Frustrating as all heck to have the eggs looking mangled when serving. I have cursed in the past when it happened...good luck!

Thank you so much for the "plunge" tip @walkonby !! I had drained the pot quickly, added water and then hubby called me to do WORDLE and yep there's my error. I never thought of cracking and then putting them back in cold water while I peel
I appreciate your help SO MUCH!!
I've always admired the kitchen staff who successfully peeled all of the eggs in the free breakfast room at hotel like Best western. Now I know their trick3.50 125.00 30.00

Day 3 of Intermittent fasting. At 12 noon had 2 hard boiled eggs, sliced and divided onto 4 Ryvita Snackbread, which had a thin schmear of mayo on each. small bowl of roasted red pepper/cauliflower pureed soup, 2 small baby cucumbers cut into fingers with 2 individual cups of plain hummus. 1 cup plain Greek Yogurt with cinnamon, vanilla extract and Stevia drops, with blueberries, raspberries, black berries and banana. Still pretty full. Will attempt to pack in 2 more meals before 8 p.m. then nothing till noon tomorrow.
Now THAT'S scarier than Halloween!

noon breakfast, 10 pieces homemade Air fryer chx wings, 1/2 a boiled Yukon gold potato with butter, S & P, Coke Zero, a smidge of that delicious apple graham cracker crumb dish I cooked up late last night. The guys went crazy for it. I can see why now......Mmmm

special k cereal (the one with almond and vanilla flavor) and milk. The cereals were on sale at rcss last week with points and coupons they worked out to be $1/box family sized so I got 10 boxes to share with 2 other families.

So late eating breakfast but ended up having a small can of thai chili light tuna ( mixed with mayo ) spread onto crispy pita crackers. Some black pepper cashews as my side.
Large Keurig coffee.

A crazy early breakfast. A soft crusty bun sliced into thin into pieces/toasted/buttered and " mayonnaised ", filled with leftover Air Fryer roasted chx breast and a Tassimo Cafe Crema
