Simply toss 1 cup of your favorite berries into a blender with 1 tbsp of chia seeds, and a tsp of honey. Blend, poor into a jar and place in the fridge over night. The chia seeds create a lovely jelly like texture to the sweet berries and honey. Fresh, easy, and artificial sugar's and pectin free jam! Enjoy!

Plan on trying this when I get some chia seeds. How long will it last and can I freeze it?

You can store them in the fridge to keep them fresh. Haven't frozen then before, so not sure.

    This sounds so good!

I store my chia seeds in the freezer. Seems to work okay.

For your fruit - all the recipes I've been reading have suggested freezing the fruit and allowing it to thaw a little before making this jam. No one seems to have really tried freezing the jam itself. The jam should last approx two weeks in the fridge. I don't know a thing about canning, so I have no idea if you could process this afterwards.
