    I have three apple trees in my back yard and this was a very good year. I cannot stand to see them go to waste. I've made so much apple sauce (I peel my apples first and use the skin to juice with so I can have apple juice or heat it up with a cinnamon stick and I have apple cider....it can be frozen) but what I have started doing is substituting applesauce for sugar in recipes and it has been working out great. I tried applesauce pancakes, fresh backed squash mashed with applesauce and cinnamon,pumpkin muffins with applesauce and smoothies with applesauce. My mom does bran muffins with applesauce too but I haven't tried that yet. Good Luck

    I think ill have to do another batch of apple sauce with my left over 20 lbs .. Cause I did pies and turnovers and their not a big hit in this house . Muffins too I think will be good

    Tasha313, here are a zucchini recipe worth trying:

    Zucchini Chocolate Glazed Cake

    Cake Ingredients

    2 1/2 Cups Flour
    1/2 Cup Cocoa
    2 1/2 tsp Baking Powder
    1 1/2 tsp Baking Soda
    1 tsp Cinnamon
    3/4 Cup Butter or Margarine
    2 Cups Sugar
    3 Eggs
    2 tsp Vanilla
    2 Cups Shredded Cucchini
    1/2 Cup Milk
    1 Cup Choppped Walnuts

    Glaze Ingredients

    2 Cups Icing Sugar
    3 Tbs Milk
    1 tsp Vanilla
    Cocoa to Taste


    Directions:

    1. Combine dry ingrendients
    2. Beat together butter or margarine and sugar until smooth
    3. Add eggs, one at a time
    4. Stir in vanilla and zucchini
    5. Alternately stir in dry ingredients and milk
    6. Stir in walnuts with the last addition
    7. Pour batter into a 10 inch bundt pan
    8. Bake at 325 degrees for 1 hour
    9. Cool in the pan for 15 minutes
    10. Turn cake out on to a wire rack to cool completely
    11. Mix together glaze ingredients
    12. Drizzle over baked cake.

    Zucchini Orange Loaf

    Ingredients:


    4 Eggs
    1 1/2 Cups Sugar
    2/3 Cup Orange Juice
    3/4 Cup Oil
    2 Cups Shredded Unpeeled Zucchini
    3 1/4 Cups Flour
    1 1/2 tsp Baking Powder
    1 1/2 tsp Baking Soda
    1 tsp Salt
    2 1/2 tsp Cinnamon
    1/4 tsp All Spice
    1/2 Cup Chopped Chopped Nuts

    Glaze Ingredients:

    2/3 Cups Sugar
    3 Tbs Orange Juice

    Directions:

    1. Beat eggs until thick and lemon coloured
    2. Gradually beat in sugar
    3. Stir in oi., orange juice and zucchini
    4. Stir in dry ingredients and mix well
    5. Pour batter into 2 greased loaf pans
    6. Bake at 350 degrees for 45 minutes
    7. Cool 10 minutes and remove from pans
    8. Mix glaze ingredients and spread over warm loaves

    I was never a fan of zucchini until I had it thinly sliced, press-dried with paper towel, coated in flour, dipped in egg, then breaded in panko crumbs. It was served with pasta and sauce. So delicious I'm hungry thinking about it

    Not sure if you are into dough rolling, but you could premake apple pies and freeze them. Then you just take one out and bake when needed. I found a page with a bit of instruction that might be of help: http://www.ehow.com/how_6321442_free...apple-pie.html

    I've never really eaten zucchini until recently, when I bought a slicer/dicer that makes 'spaghetti' out of zucchini. You wouldn't need that though, cut into thin strips, bake in the oven with onions, mushrooms, peppers, olive oil, salt, pepper. I find it's kind of 'filler,' doesn't taste like much of anything.

    Apples, we've always picked too many. Put them in a cool place like your basement and they will keep for quite a while.
