I am invited to a cookie exchange and I need some ideas!
Can be cookies, squares, sweets...anything that is easy to make in large quantity and split up.

Soft gingerbread cookies - to roll and cut shapes
------------------------
Cream together:
1/2 c margarine
1/2 c molasses
1/2 c sugar
Beat in 1 egg.
Add:
2 1/2 c flour
1/2 t baking soda
1 1/2 t ginger
1/2 t nutmeg
1/2 t salt
1 t baking powder
1 1/2 t cinnamon
1/4 t cloves
Mix well, roll and cut into shapes.
Bake on ungreased cookie sheet at 350 degrees, about 7 minutes - depending upon size!

Raisin Walnut Slice (tastes like buttertarts)
------------------
Base:
1/2 c butter/margarine
1/2 c brown sugar
1 1/2 cups flour
Mix and rub together til it resembles cornmeal. Press in a 9x9 pan.
Bake in 300 degree oven for 20 minutes.
When done, remove pan - put oven up to 325 degrees
Topping:
3 eggs
1 1/2 cups brown sugar
1 t vanilla
2 t flour
1 cup raisins (I use sultanas, if too dry, soak a bit in hot water, then squeeze out)
1/2 cup chopped walnuts
Mix together and pour over partially baked crust.
Bake at 325 degrees for 35 minutes

Sponge Toffee (tastes just like Crunchie bar!)
Grease a 9x13 pan heavily, and set aside.
(read all instructions before you make, so you have everything ready...)
1 cup sugar
1 cup corn syrup
Bring these to boil over medium heat. Stir until sugar is melted.
Cook until 305 degrees on a candy thermometer.
Have 4 tsp. of baking soda ready....
Now comes the FUN part -
When mixture is at the right heat, take pan off the stove.
Pour in the measured baking soda all at once and stir, stir, stir.
It will get foamy and pouffy and grow!!! Keep stirring til light and stops bubbling, then pour immediately into pan. Cool thoroughly then break into pieces (gently!) with a knife and hammer, lol!!!
Can dip ends in melted chocolate if you like.

Peanut Brittle
Have a greased cookie sheet ready.
1 cup sugar
3/8 cup water (little less than 1/2c)
1/2 cup corn syrup
2 cups salted peanuts
1 Tablespoon butter
1/2 tsp. baking soda.
In a pan, combine sugar, corn syrup and water. Bring to a boil and simmer until softball stage - 238 degrees.
Then add peanuts, stir them in, and keep heating til it reaches 290 degrees. (don't overcook)
Remove from heat. Stir in butter.
Add baking soda - stir until it foams, and turns a light colour.
Spread on greased cookie sheet, and cool. Loosen from sheet and break into pieces. Store in an airtight container.

Eatmore bars

Heat together in a pan:
3/4 cup peanut butter
1 cup corn syrup
1/2 cup chocolate chips
1 Tablespoon molasses
Add:
1 teaspoon vanilla
2 1/4 cup Rice Krispies
1 3/4 cup finely chopped peanuts
Mix together quickly, spread on well-greased cookie sheet.

I am known for my baking. Here are a few recipes that are always a big hit.
Oatmeal Molasses Chocolate Chip Cookies
2 cups all-purpose flour
2 cups oatmeal
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup sugar
¾ cup shortening
2 eggs, beaten
5 tablespoons light molasses
2 teaspoons vanilla extract
Chocolate chips (to taste)
½ cup chopped walnuts (optional)
½ cup raisins (optional)
- Preheat oven to 350F.
- In a large bowl, stir together the flour, oatmeal, baking soda, baking powder, and salt.
- In another large bowl, beat the sugar with the shortening until smooth and creamy; mix in beaten eggs, molasses, and vanilla. Gradually mix in the dry ingredients. Stir in chocolate chips, walnuts, and raisins. Drop by teaspoonfuls onto ungreased baking sheets.
- Bake for 10 to 12 minutes, or until browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
Note: the molasses keeps these cookies nice and moist, even when left uncovered.
Fudgey Brownies
1 1/3 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 cup butter
1 cup cocoa
2 cups sugar
4 eggs
1 ½ teaspoons vanilla
1 cup chopped nuts (optional)
1. Stir together flour, baking powder, and salt in small bowl. Melt butter in a large saucepan. Remove from heat. Stir in cocoa. Blend in eggs, sugar, and vanilla. Blend in dry ingredients and nuts (optional). Pour batter into greased 9x13-inch baking pan. Bake in pre-heated 350F oven 30 to 35 minutes or until done. Make sure that you do not over bake them, otherwise they will lose their fudgey texture. Cool.
Oatmeal Chocolate Chip Bars
Ingredients:
1 cup unsalted butter, at room temperature
1 1/4 cups brown sugar
3/4 cup white sugar
2 eggs
1 tsp vanilla
2 cups flour
2 tsp baking powder
1/2 tsp salt
2 cups quick-cooking or old fashioned oats
1 1/2 cups chocolate chips
Directions:
Preheat the oven to 375. In a mixing bowl, cream together the butter, sugars, eggs and vanilla. In a separate bowl, combine the flour, baking powder and salt. Gradually add the flour mixture to the mixing bowl and beat just until combined. Fold in the oats and chocolate chips. Spread in a rimmed 10x15 baking pan, using a spatula or your hands to press into place. Bake for 20 minutes, or until golden brown. Cool, but cut the bars while they are still somewhat warm, as a knife will go through them more easily.
Note: The texture of the dough will be quite wet and sticky. Don't worry about it. The freshly baked squares have the texture of slightly under-baked cookies. I have made this in a 9x13 inch pan. It just made them thicker. You could also halve this recipe and use a 9x9 inch pan instead.

Cake Mix Chewies
1 box chocolate cake mix (though I have used almost every flavour!)
1/3 cup water
1/4 cup (1/2 square) melted margarine
1 egg
----
1 cup chocolate chips

Preheat oven to 350 degrees. Grease cookie sheets or use parchment paper.
Beat above ingredients together, add chocolate chips.
Drop by teaspoonsful on cookie sheets. They spread... I only put eight on each sheet.
Bake about 10 minutes until still soft (they puff up, and are ready when they flatten again), but edges are set.
Cool on sheet for just one minute, then remove OR they will stick! They seem really soft when you take them off the cookie sheet, but as they cool they harden a bit.
