My mother got this recipe from a old French Canadian woman approximately 50 years ago and she made it for years and now ive been making the Tortiere. I have never changed the ingrédients. MOM`S TORTIERE (MEAT PIE)
6 TO 7 SMALL TO MEDIUM POTATOES. BOIL
AND MASH VERY WELL. DO NOT LEAVE ANY LUMPS.
3 LBS OF MINCED MEAT (1 PORK, 1 VEAL
AND 1 BEEF) (3 PKGS SO IT COULD BE A BIT MORE THAN 3 LBS
FRY THE MEAT IN A SEPARATE FRYING PAN.
DRAIN OFF FAT. PLACE FRIED MEAT IN A LARGE MIXING BOWL AND LET COOL.
SET ASIDE FAT FROM FRIED MEAT.
2 ONIONS, BIG, CHOPPED AND 2 OR 3
CLOVES OF CHOPPED GARLIC.
FRY ONIONS AND GARLIC TOGETHER IN
FRYPAN WITH A BIT OF LARD (I USE CRISCO)
ADD ONIONS AND POTATOES TO MEAT. SALT
AND PEPPER TO TASTE. ADD 2 ½ TSPS (OR MORE) PARSLEY (FRESH OR
DRIED); ½ TSP CINNAMON AND ¼ TSP GROUND CLOVES. MIX EVERYTHING
WELL. ADD 1/4 CUP FAT FROM FRIED MEAT.
MIX YOUR PIE DOUGH (OR USE FROZEN).
SPOON IN THE MEAT MIXTURE INTO PIE CRUST. BAKE AT 425 -450 F
(DEPENDING ON YOUR STOVE) FOR APPROXIMATELY 25-30 MINUTES. MAKES 3
LARGE PIES OR 15 SMALL SINGLE SERVE PIES.
TO FREEZE : WRAP IN ALUMINUM FOIL
AND THEN PLACE IN FREEZER BAGS. THE TORTIERES FREEZE VERY WELL.
IF YOU WANT TO MAKE A BIGGER RECIPE,
JUST INCREASE YOUR INGREDIENTS ACCORDINGLY.Last edited by SnowFlakey; Thu, Nov 7th, 2013 at 02:38 PM.

The 10 Tortieres i made today are a serving for 2 people, hence only 10. If you use the smaller sized tins (like from the dollar store) you will have 15 tortieres because they are single serve.
