I make a lot of soup but I am embarrassed to say I have never made Borscht.
I was gifted with some fresh beets today from a friend's garden and want to try this recipe. Just wondering if any borscht makers could take a peak at this recipe and tell me if you think this recipe would be worth making. I liked it because it has the beef in it( i think this is unconventional for Borscht) and it would be a complete meal.Any thoughts would be appreciated!!

@thriftygranny it looks near the same as my recipe minus the beef. I would still eat a borscht made with beef, especially a tender cut that stewed a while. You are good to go, enjoy the soup!! Mine is all gone now and it was a very large pot!

hmmm i did not know they have this soup. I wonder if it's the same as the Campbell's one. Several restaurants here serve Campbell's wicked thai chicken soup and it's so yummy. They don't come in small cans but in large pouches and i found them at TGP (the grocery people). Campbell also has the creamy curry chicken but it's not as good as the thai one.

Thank you Walks and Lecale, our Superstore has outside round on for 3.98 a pound so grabbed a large on and cut it in half. One for the borscht and the other half for beef dips!!

I love beef barley soup. My friend adds a dash or two of balsamic vinegar to her beef & barley soup!

Mmmmm, DH and I decided on butternut squash soup. We got busy together early this morning prepping the squash and we also roasted some sweet potatoes along with it. We strayed off course a little by adding other things, ( chick peas, celery, white kidney beans, a few carrots coins and bit of chopped cabbage ) but you know soup? The more that is in there the better the flavour!
I always puree mine in the blender while he looks on in horror! He eats his all chunky style in the broth. That is o.k. we both made yummy noises. ha ha
