    my currrent fave soup to make is cauliflower cheddar:

    2 tbsp butter
    2 tbsp flour
    1 med onion
    3-4 cups cauliflower or broccoli or mix of both
    2 c chic broth
    2.5 cup milk
    1.5 c shredded cheddar
    optional - spinach, corn, peas.

    melt butter. sweat onion. slowly add flour to make roue.
    pour in chic broth. add cauliflower/broccoli. cook on medium until veg are soft. if desired, puree.
    add milk and cheese.
    add optional ingredients.
    season to taste.
    i like to add a shot of frank's hot sauce (i add that sh*t to everything). even if you don't want the soup to be spicy, a shot or two of hot sauce just lifts the flavour a bit.

    Make your own chicken stock.

    Save the carcass from a chicken or turkey.

    Depending on how much chicken stock you want to make. This is for a small pot or chicken soup

    1/4 carcass (bones and meat)
    1 small carrot, chopped
    1/2 of a celery stalk
    1 small onion
    1 clove of garlic, chopped
    several peppercorns

    Bring to a boil and simmer on low until carrots and celery is done. You can add noodles or rice or barley after for a soup or you can strain for chicken or turkey stock. Nothing fancy, simple and easy.

    I usually boil egg noodles (Lancia) and then add to the soup as needed.

    I love love love soup, right now we are on a hamburger soup kick and of course I can not find the recipe to share with you all :/
    I also make french onion soup a lot, that recipe is easy
    6 small onions sliced
    1 carton beef broth (sometimes you will need more)

    Sautee the onions until lightly brown, I then add a tsp of sugar to caramalize the onions and the add the beef broth, bring to a boil and let simmer for about a hour then put in french onion soup bowls and top with any kind of cheese that suites you

    PS I am terrible at writing out recipes sorry

    very early soup making started today around 2:30 a.m. ( ask Hydro why I do this....lol ) Anyways had plenty of bones and meat to work with from the 2 birds we cooked at Thanksgiving. After first straining to remove the dregs, the broth was so rich and flavourful. Only added some new diced onion and veggies to the second simmer.

    Maybe not when cauliflower could be over $10 now but if you have cauliflower and cheddar cheese, you could have this soup:

    I just hand made 69 pork won tons and froze them all individually before bagging them. This won ton soup will be a warm-me-up for the dinner guests who are arriving around noon on Christmas Day. The broth is easy peasy to get going on the day of. Lots of yummy appetizers as well because dinner ain't till 6 or 7 p.m.

    Made a very successful new batch of cauliflower roasted red pepper soup on Sunday afternoon. Pureed it all up after it cooled and got THIRTY 1 cup servings from it! Was I slightly miffed at paying $3.99 for each of the 2 heads of cauliflower at NF after paying just $1.88 a head the last time? YES, however those things need to be ignored to keep my sanity and these heads were pleasantly oversized, so that helped.
    I am getting pretty good at eyeballing how much cayenne, smoked paprika and turmeric to add now....spicy!

    I made a 2 huge pots of Borscht the other day. We agte one Borscht recipe and i froze the other for those cold winter days. borscht can be eaten cold or hot.
