I have some serious Jiggs Dinner questions if anyone can help me!!

I purchased a tub of Chalkers Salt Beef about 6 months ago. It was not refrigerated at Sobeys, just a display on the floor in the meat department. I assumed it did not have to be refrigerated, hope I was right!
I want to make Jiggs dinner for my Newfie son in law and brought the pail of salt beef up from the basement and noticed it has a production date of December 2013.
My question is, can I still use this and should I have had it refrigerated? I have tried contacting the company and it just goes to voicemail and really haven't been able to find solid info on the web.Hope someone can give me some guidance and maybe some Jiggs dinner tips!!!!This thread is currently associated with: Sobeys

No, it does not need to be refrigerated. It is basically pickled in salt brine. I would suggest that when you first boil the meat and before you add the vegetables that you taste your water. It may be really salty in which case I drain some water off, add fresh water and boil some more.
