I have made these a few times and they are pretty yummy. I don't buy their flour blends because I can't find them around here. I just use chick pea flour and brown rice. Celiac neighbour says they remind her of the Red lobster biscuits. Maybe I'll brush the top with garlic butter and sprinkle with parmesan next time.

Just thought I would welcome myself to the thread as our family will be going GF (for the most part) on June 27 after DD#1's scope on June 27. Her blood test was positive for Celiac. She is 17 months old, so monkey see monkey do, and we will all be adjusting our diets to help her. Glad to know I have some SC GF pros or pros in the making if I need some help. :D

Thats not right, Rev Canada should reimburse anyone that has to purchase gluten free. But I guess because I'm Celiac, the health consequences are much worse. I was surprised that you replaced the sugar with icing sugar. Did you use gluten free icing sugar, because the regular stuff you by in the grocery store has gluten in it. As does chewing gum, toothpaste, ketchup and so much more. One has to be so very very careful these days. Thats why for me, it's easier to make most of my own things, and buy for the rest of my famiy.

I buy gf icing sugar at Loblaws or just make it
I emailed or called tons of companies.
Heinz ketchup is gf.
Crest tooth paste is gf.
I don't chew gum cause I am allergic to chemical replacements
When I emailed Redpath about their icing sugar they said they use corn starch but could be contaminated.
I find the worse is going out to eat!! They tell you it is gf. But I alway get sick
Now I just eat salad with lemon wedges-- really in dinner

I am not sure if Celiac consequences are worse?
I know there are long term side effects including: colon problems, bone loss etc
But I need to carry an epi pen!
The dr said the allergy will get worse and one day I will die if I eat wheat. So scary!
Right now I get a rash, my tongue and throat swells, and i retain so much fluid and have the runs and feel like I got beat up..and I am also a bigger *itch then usual
But I guess people with peanut allergies would want the gov to pay for their food too.

I found this list http://www.celiacpei.ca/images/pdf/G...isedoct108.pdf very helpful in knowing what distributors practise gluten safety in manufacturing. There is always a risk of cross contamination when putting trust in others, however, this list enables me to entrust some companies and their products over others (like trusting Crest over Colgate). We plan on starting off DD on nothing processed or manufactured and then gradually introducing those products which claim gluten safety back in (e.g. Heinz Ketchup). DD can't tell us what bothers her yet so we will have to look for symptoms. It will be a slow and lifetime process of determining what works and what doesn't. Anything will be an improvement from now as we are feeding her gluten until the scope...she is sitting whining next to me right now.
I imagine it will be so freeing for her emotionally and physically once we can go GF. With labeling changes early August this year it should help as well. Thanks for the thread. Every day I learn more and more.

Some restaurants such as Earl's have a gluten free area in the kitchen. If you are a Celiac like me, you would get sick, just from cross contamination. A lot of restaurants will tell you that the steak, or chicken and say it is gluten free, which is may be, the problem lies when they put it on the grill and cook it. The same grill that they cook the garlic toast and everything else on the menu that is grilled. Even in my own home, I have separate pots and pans, baking sheets and tins for all my gluten free cooking. I also have one area that I use only to prepare gluten free foods. I have a severe case, but cross contamination is a huge issue. The only restaurant I trust is Earls currently, which is sad.

I cook 90% gluten free ...10% is bread--lol! And if I could find a good recipe for that it would be 100% but I cannot torture the rest of the family with the bread / bun recipes I have found

I do not even have wheat flour or cereals in the house. We use gf everything. One soya sauce,ketchup,rice etc... I only bake gf.
Once every 2 months they order pizza and I make my own...had a bad reaction from pizza nova
Never heard of Earl's where is it?
The one I go to is called Frankie's it is in Uxbridge and they do not have gluten in the restaurant
They have gf bakery down the the street with great bagel chips

Earl's is a huge restaraunt chain. I'm surprised that you have never heard of it. They are along the lines of say the keg, roadhouse, Boston Pizza and such. They sell steaks, ribs, chicken, pasta's no pizza though. They were one of the very first chains to become a real gluten free chain. There are lots of restaurant that are strictly Gluten Free, but as a place for everyone on the family to enjoy something, Earls is the only one I trust currently.
As for a reply to your statement "But I guess people with peanut allergies would want the gov to pay for their food too." I'm not really sure what this meant. It seems that you're mocking the fact that Rev Canada will reimburse Celiacs the difference between the cost of our 4 muffins $7.99 and a package of regular muffins $2.99 I'm not sure, but thats how it seems to me. People who live with being Celiac have to pay a fortune if they don't cook things like breads and so on. Not a lot of people can afford it, and some suffer consequences because of it. If you have a peanut allergy, as my SIL does, you don't have to payy $6 for a loaf of bread. Unfortunately in our society, things such as peanut allergies, lactose intolerance and many other prevelant allergies have been accounted for by manufacturers for many years. It has only been the past 5 years that we heve been acknowledged. Since the study came out by our government stating that 1 in 7 people has a gluten intolerance, manufacturers have decided to jump on the band wagon. They have seen an opportunity to make money off our health problems.Celiac, although is has been around for just as long, was something they didn't care about as much here as most of the Celiac 's were in the European countries.
You forgot to add to the list issues that can arise if a Celiac gets contaminated from gluten, malnutrition, anemia, and vitamin deficiencies that may result in fatigue, stunted growth, neurologicial problems. Osteoporosis
Calcium and vitamin D are lost in the stool instead of being absorbed into the body, leading to rickets in children, a type of kidney stone called an oxalate stone, as well as osteomalacia (softening of the bones), osteopenia, and osteoporosis. Untreated celiac disease leads to an increased risk of gastrointestinal cancer, such as lymphoma. Celiac disease has also been associated with depression, schizophrenia, anxiety, neuropathy, balance disorders, seizures, and severe headaches. Plus many more.
I'm sure you probably didn't mean it the way it was typed, but without the repayment of money I spend monthly just to purchase the flours and products to produce my own ketchup (Heinz may say they are gluten free, but it is still made in a plant that manufacturers many products that contain gluten, thus the ability for cross contamination is always there), bbq sauces and everything else, I would be struggling. We live on our pensions, and anyone on a pension knows that if you had to pay 4 times as much as any other person for day to day foods, that pension would never cover your mortgage, bills, car plus allow you to eat.
I'm not sure if you ever checked, with all the changes out there from year to year, perhaps revenue canada has some help for people with allergies. There are so many great sites out there, but I would suggest that anyone with an allery or intolerance to gluten to join the National Celiac society. They have a fabulous newsletter that comes to you monthly, it updates all the latest in foods, changes to Rev Canada claims, recipes and help if you have any questions you need answered.
