No pretty pictures, but here is my favourite pumpkin pie recipe. I used to make this for my husband's birthday in October as he preferred it to a cake.
From "Madame Benoit Cooks at Home", by Jehane Benoit, Paperjacks Books, 1980.
This makes enough for 2 8" pies or 1 10" pie.
First, you "brown" the pumpkin. Measure 2 cups (500ml) of strained or canned pumpkin. Butter the bottom of a large cast iron frying pan generously. Put the pumpkin in the fry pan over medium heat, stirring most of the time, and turning it over occasionally until all parts dry properly. Keep doing this until you only have about one and a half cups left. It will be slightly browned and the natural sweetness of the pumpkin will be enhanced.
Place the browned pumpkin in a bowl, sprinkle with 2 tbsp (30ml) flour, add 1 cup light brown sugar, and stir until thoroughly mixed. Scald 2 cups of milk. Add milk to 1 cup heavy cream (i.e.whipping cream), then add 1 tsp cinnamon, half tsp ground ginger (or 2 tsp freshly grated ginger, which is better), and half tsp nutmeg. Pour all this over the pumpkin mixture. Mix in. Add 2 well beaten eggs. Beat together until well mixed. Line pie plate with dough of your choice.
Mix together 2 tbsp sugar, 1 tbsp flour and a pinch of ginger. Sprinkle this mix on the bottom of the pastry - it helps prevent sogginess. Fill the pastry shell three-quarters full with pumpkin mix. Place strips of foil around edge of pie to keep it from browning too fast.
Bake 15 min in preheated 450F (250C) oven. Reduce heat to 325F (160C) and bake 30 min. more (I find it takes longer than that, up to an hour.) It is done when it shakes only in the middle when you jiggle it back and forth.
