SPRINKLE CRINKLE COOKIES
Recipe type: Dessert
Serves: 18
INGREDIENTS
1 box funfetti cake mix, dry
½ cup vegetable oil
2 eggs
⅓ cup powdered sugar
⅓ cup multi-colored sprinkles
INSTRUCTIONS
Preheat oven to 350.
In a large bowl combine cake mix, vegetable oil, and eggs and mix well to combine. Cover and chill dough 15 minutes. Use a tablespoon to scoop dough and roll into balls. Place sprinkles and powdered sugar in two separate bowls. Roll dough balls in sprinkles to coat all sides, then in the powdered sugar. Set cookie dough balls about 2-3 inches apart on a large baking sheet. Bake 10-12 minutes. Cookies will still be a little gooey. Allow to cool completely before using a metal spatula to remove cookies from sheet. Store in airtight container.

Tia Maria cheesecake
Serves 16
For the biscuit crust
85g hot melted butter, plus extra butter for greasing
14 plain chocolate digestive biscuits, finely crushed
For the cheesecake
3 x 300g packs full-fat Philadelphia cheese
200g golden caster sugar
4 tbsp plain flour
2 tsp vanilla extract
2 tbsp Tia Maria
3 large eggs
285ml carton soured cream
For the topping
142ml carton soured cream
2 tbsp Tia Maria
cocoa, for dusting
8 Ferrero Rocher chocolates, unwrapped
Method
Heat oven to 180C/fan 160C/gas 4. Line the base of a 25cm springform tin with baking parchment. Blend butter and biscuit crumbs. Press onto the base of the tin, bake for 10 mins, then cool.
Increase the oven temperature to 240C/fan 200C/gas 9.
Beat the cheese and sugar with an electric whisk until smooth, then whisk in the flour, vanilla, 2 tbsp Tia Maria, eggs and 285ml soured cream.
Grease sides of the cake tin with butter. Pour in the mixture and smooth. Bake for 10 mins, then turn oven down to 110C/fan 90C/ gas ¼ for 25 mins. Turn off the oven, then open the door and leave to cool inside the oven for 2 hrs. Don’t worry if it cracks a little.
Mix 142ml soured cream and Tia Maria, then smooth on top of the cheesecake. Chill.

INGREDIENTS:
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sugar
- 6 tablespoons unsalted butter, at room temperature
- 1/4 cup canola oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup dried cherries, chopped
- 2 oz dark chocolate (60-70 percent cacao), chopped
- Vegetable oil cooking spray
- 1/2 cup pistachios, finely chopped
INSTRUCTIONS:
In a bowl, combine flour, baking soda and salt. In a separate bowl, using an electric mixer, beat sugar, butter and oil until smooth. Add eggs and vanilla; beat until combined. Add flour mixture to egg mixture in 5 batches. Stir in cherries and chocolate. Divide dough in half; form into two logs, 2 inches by 8 inches; wrap in plastic wrap and freeze, 1 hour. Heat oven to 350°. Coat 2 baking sheets with cooking spray. Spread nuts on a cutting board; roll logs in nuts. Cut logs into 20 slices each and arrange on baking sheets. Press cookies lightly. Bake until golden, 8 to 9 minutes; transfer to wire rack. Yield: 40 cookies.
