I make these for my Dad... soooo good and super easy!
Beer Nuts:
2 c. or 1 lb. raw peanuts
1/2 c. water
1 c. sugar
Put all ingredients in fry pan and cook until water is gone, about 5 minutes. Place in buttered cookie sheet. Sprinkle with salt and put into 300 degree oven for 15 minutes. Stir once and bake 15 minutes more. Then let stand until cool and put into glass jars.

**BANANA BREAD**
1 cup sugar
2 cups flour
1 tsp. baking soda
1/4 tsp. salt
1/3 cup softened salted butter (not margarine)
1 beaten egg
4 (medium) mashed RIPE bananas
Optional: green and/or red cherries, raisins, or nuts (1/4 to 1/2 cup)
Pre heat oven to 375 degrees
Mash bananas
Soften butter (microwave for about 15 secs)
Beat egg in separate bowl
Butter AND flour loaf pan
Mix together: sugar, flour, soda, salt
Add remaining ingredients and mix just till blended.
Bake for 15 minutes at 375
Reduce heat to 350
Total cooking time about 1 hour
I usually separate this batch into 4 mini loaf pans (from Dollarama). They then fit nicely into zip-loc baggies and can be frozen. Freezes well!!!

Oh I have lots...but this is by far the quickest and most simple...
1 Pkg of Skor Chippets (English Toffie)
* 1 Pkg of Ritz crackers - Crushed 250 Grams
* 1 Tin of Condenced Milk (Eagle or no name is fine)
Directions 1. Mix everything together
2. Place in a 8 x 8 Greased Pan
3. Bake at 350 for 20 min. only
4. Cut into small bars while its still warm.

Cheesecake Squares (My most requested recipe)
Base: 1 cup flour, 1/3 cup cold butter, 1/3 cup brown sugar. Blend with fork or pastry cutter til crumbly. Set aside 1 cup to use as a topping. Press the remainder into an ungreased 8x8 pan. Bake at 350 degrees for about 12 minutes (not brown).
While that is baking make the filling -
Filling: Beat these all together, first with a wooden spoon, then an electric mixer til smooth -
One package cream cheese (8 oz), 1/4 cup white sugar, 1 egg, 2 Tbsp. milk, 2 Tbsp. lemon juice, 1/2 tsp. vanilla.
Spread this over the partially baked crust; sprinkle with reserved crumbs.
Bake at 350 degrees 25 to 30 minutes - edges will get browned, top crumbs golden. It will puff up a bit, but settles down once you take it out of the oven and it cools.
Let cool completely, then put in fridge to cool before you cut into squares.

Sugar Plums! (instructions long, but not hard to make)
(ahead of time, make some different coloured sugars, which you will roll the balls in after they are baked - I just put white sugar in a ziploc bag, add a few drops food coloring, mix around til blended, then put each in a soup bowl to dry out a bit. I make yellow, red, blue, green - probably 1/4 cup of each.)
For the cookies -
1/2 cup softened margarine
1/2 cup sugar
1 egg
1 tsp. vanilla
Beat margarine, sugar, egg and vanilla til fluffy. Add dry ingredients -
1 1/4 cup flour
3/4 tsp. salt
1/2 tsp baking powder
Mix well, flatten into disk, wrap in plastic, refrigerate one hour.
Make the centre filling -
Finely chop and mix 1/4 cup raisins, 1/4 cup pitted dates, and 1/4 cup walnuts or pecans. Mix in 1 Tbsp. plum jam.
(The next part isn't as piddly as it sounds, it goes fast...)
Take dough from fridge, scoop rounded tsps. of dough, roll into 3/4 inch balls. Make a little indentation into ball with finger, scoop about 1/4 tsp of filling, put in centre of dough, pinch dough around to close, reroll into ball.
Put on greased baking sheets - refrigerate 1 hour (or freezer 10 min).
Bake at 350 degrees about 12 minutes; they will still seem soft.
Melt some margarine in a bowl; have coloured sugars in individual bowls.
While cookies are still warm, brush with melted butter then roll in coloured sugar, set on tray to dry.

Lemon Squares
I made some yesterday, they were gone yesterday. Making some right now again.
1cup flour
1/2 cup butter
1/4 cup powdered sugar
Mix together with fingers and pat into 8x8 pan. Bake at 350 for 20 mins.
Mix 2 eggs, 1 cup granulated sugar, 1/2 teaspoon baking powder, 2 1/2 tablespoons lemon juice and a dash of salt. Mix together and pour in pan and bake 350 for 20-25 mins. cool and sprinkle with powdered sugar.

Rich chocolate truffle
Ingredients:
1/3 cup full cream{not half n half}
200gm Dark chocolate{melted}
35grams butter
1Tbsp Orange liqueur or rum{optional}
Dark cocoa powder or icing sugar for rolling.
Method:
1.Add cream and butter to the melted chocolate, and stir until the butter is melted.
2.Add liqueur or rum and refrigerate until firm.
3. roll into balls with the help of a melon baller{use hands , if melon baller is not available { and roll in the cocoa.{use icing sugar or shredded coconut for rolling for variety}

Ok, here's a super easy no bake recipe for Chocolate macaroon
Melt 8 squares of semi-sweet chocolate (or 1 ½ cup semi-sweet chocolate chips) in a double boiler.
Mix in 1-1/3 cup of coconut
Form into balls (size of 1 teaspoon); drop on parchment paper; refrigerate.
Can be frozen... Enjoy!
