    Wow cheekysaver, you and your mom sure have been busy. Looks great and I am sure it will taste wonderful this winter. Question: What is rhubarb relish and how do you eat it? On a burger?

    We planted a garden this year and over estimated things. We will have hundreds of onions, any suggestions for the onions would be welcomed.

    LOL rhubarb relish throws off most people. It is considered a meat relish and it has rhubarb, onions, cloves, cinnamon, sugar and vinegar. We eat it on eggs. It is my Grandma's recipe.

    Cheekysaver, your rhubarb relish sounds the same as the chutney I made, we use it as a marinade for chicken and pork chops, just pour on your meat, then and bake in the oven. Will make about 25 pint jars of that this year, rhubarb is ready to pick again.

    Ladydarcie, you can do so many things with all those onions, can, freeze, relish, dehydrate.
    One year had so many onions and no time, so just peeled the onions, cut in halves and froze them, ready for soup,stew, pot roasts, etc., chop fine and freeze for use on hamburgers and hot dogs, just thaw them. Have fun with your onions!!

    I made clover jelly for the first time a few weeks ago. I had decided that dandelion jelly was on the agenda for the day only to discover that I'd missed peak dandelion season by just a few days I'm sure. Couldn't even find a hand full of them. But there were a ton of clovers everywhere so I searched out a recipe and sure enough found a very simple one so we gave it a try. After what seemed like an eternity of picking clovers (mostly because I had my 4 year old and 1 year old in tow and the 1 year old dumped over the full bowl of clovers into a mud puddle half way into picking) we had enough. I only made a small batch to try and froze the rest of the juice to experiment with later.

    Spicy pickled green beans
    Apricot jam
    Apple & Armagnac jelly (amazing!) and an Apricot persevere (with cardamom and vanilla which is to die for!)

    Coupondawn, your jelly looks wonderful!!

    Made cranberry sauce, spicy Asian dipping sauce, pancake syrup this weekend, have some mustard seeds soaking to make English mustard. Trying to make a lot of condiments for use through out the year.

    Kitty77, now you've got me thinking on a whole other canning level! Mustards, cranberry sauces, syrups....... Oh I'm so giddy

    Canadascouponeer, I think you might have some luck finding them at either garage sales or thrift stores (I suggest getting new seals though) but I also heard that at the end of the "canning season" places like Canadian Tire and such have them on sale and that's when I plan to really stock up so I'm set for next summer for sure

    Canadascouponeer right now the best place to buy new jars is at Walmart. They are the golden harvest brand and they tend to be on skids. They are around $6.47 a case. (no wide mouth... but you rarely need widemouth jars. I can things like meat all the time in a regular mouth jar) At some point at the end of aug canning jars go on sale in some stores. This has variations. Some wm's carry canning jars year round and some don't. The stores that don't carry them year round will clear them out. I am not sure if lowes is carrying canning jars this year but they do have some nice clearance deals as well sometimes. Sometimes used jars will see you though. You want to get regular or large mouth (not gem jars... even with the conversion rings they don't seal as well. Almost ever lid seal fail I have had has been on a gem jar.) You also want to have rings in nice shape and jars with no chips or cracks. A package of replacement rings with lids is 4.37 for 12 regular mouth lids. A package of 500ml canning jars is 6.47. This means if you buy used that you need to pay under $2 a case if the rings are not in place. This info is a great bargaining tool when your buying them used.If Canadian Tire brings back scratch cards they can be a nice way to reduce the cost as well.As for thrift stores, the good will here likes to sell them for a whopping $1 - 1.25 each... without a new lid. They by far exceed the price of new so watch your prices. I hope that helps.

    Harbie your stuff looks awesome!!! If you try the cranberry you won't be disappointed. I have heard it is a million times better than store bought... and store bought is expensive. Here is a vid from a reputable source showing you how to can cranberry sauce and cranberry jelly. She is a award winning canner with 30 years experience.     Here is a deal on a Ball complete guide to home canning. There is one for around 15 total with shipping in the buy it now category. Try and find them used if you can.     I am sorry I have not been on much. Summer is just nutbars for us... we are either camping or recovering, canning or recovering, or shopping and recovering. Yup that looks about right.

    Let me find it and I'll post it. I personally like them more spicy than they actually are so when I open a jar I add Chili flakes and let them marinade and get spicier :D
