Thread: I thought this recipe was insane! But I tried it anyway......

We were invited for a steak dinner at our DD's home this past Saturday, so I offered to bring a side dish and of course and as usual, they asked my DH to make his Caesar Salad. I wanted to make something different, and happened upon a recipe in Allrecipes.com called "Mom's Best Macaroni Salad" which I thought looked too weird to try!! But...I did anyway, and omgoodness, everyone kept taking 2nd and 3rd helpings of it, including me! It contains....are you ready for this?........1 can of condensed milk!! I used low fat Eagle Brand and absolutely omitted the extra 1/2 cup of sugar! I'd post the entire recipe here, but right now I can't double-space (there's a glitch on SC for me) since it would look like a mess, so just head over to Allrecipes and do a search for it. It's no wonder it has 463 reviews and a rating of 4 1/2 out of 5 stars!!If you're looking for something a little different and you like your macaroni on the sweet side as so many of us do, evidently, then give it a try! But don't add that extra 1/2c of sugar!It made a lot and 'the kids' wouldn't let us take any home..hahaha....Also, the dressing would make a great coleslaw!!Enjoy!

Mom's Best Macaroni Salad
Ingredients
- 16 ounces uncooked elbow macaroni
- 4 carrots, shredded
- 1 large red onion, chopped
- 1/2 green bell pepper, seeded and chopped
- 1/2 red bell pepper, seeded and chopped
- 1 cup chopped celery
- 2 cups mayonnaise
- 1 (14 ounce) can sweetened condensed milk
- 1/2 cup white sugar
- 1/2 cup white vinegar
- salt and pepper to taste
Directions
- Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Rinse under cold water, and drain.
- In a large bowl, stir together the carrots, red onion, green pepper, red pepper and celery. Mix in the mayonnaise, condensed milk, sugar, vinegar, salt and pepper. Add the macaroni, toss gently, cover and refrigerate for at least 8 hours. I usually make this a day ahead of time, and stir it occasionally to blend the flavors. The macaroni will absorb some of the liquid.

Glad it worked out well for you!
I don't mind a sweet pasta salad, but would never do this. Condensed milk is pricey here, something I use for only a few special baking recipes a year.
I made macaroni salad on the weekend; I use a recipe adapted from one Patty posted a long time ago - so I don't have exact measurements of what I exactly use! I make a lot, because it's loved here!

Mom used to make dilly macaroni salad which has almost the same ingredients (not sure about 2 cups of mayo, maybe 1 cup and a half), diced cheddar, no carrots or red onion and not that much sugar. Used to eat that non-stop. Not drippy like KFC's macaroni salad. Will see if I can scrounge that up-I don't like cooking pasta on a hot day but a salad like this has legs and is tasty. Almost don't need to eat anything else but do need a drink of water or something to wash down that mayo.
