On Tuesday ( when I was sleeping...lol ) DH made up another delicious homemade chicken pasta soup. He uses the large Barilla shells in it. The bag with 3 large chx leg quarters I had gotten from NF ( for under $3.00 ! ) turned out to be the best economical stock maker. His added veg were onions, carrots, fresh parsley, springs of rosemary, a few fresh diced tomatoes and frozen peas. A carton of organic chx broth was needed at the end. So that was my lunch just now.

I've left the meal options wide open for the guys. They begin their 2nd 4 day long weekend! They accomplished so much around here the last time they had the 4 days off.
Projects are lined up and ready to execute. Told them I'll make whatever they fancy for lunches and dinners.

Chinese takeout-dinner for one usually equals 3 meals for me. Ginger beef, chicken fried rice and stir fry veggies.

Last night I used up 2 pkgs cream cheese that had days left to expiry, 3/4 tub sour cream also close, fined diced a mess of veggies which I consider a rescue and put it together to make a 4 layer taco dip. Luckily I had 2 small bottles of the liquid taco sauce in the storeroom and plenty of the BD Tex Mex shreds. Sadly, we had NO Tostito chips! So I used hard taco shells broken into pieces to scoop my dip! DS spread his on toast and DH used Triscuit crackers. It was all good!

Totally amazed at the length of time the 2 bags of Taylor brand salads have lasted! Finished off the one and a half bags that remained
as a large lunch salad today. Bought these on Dec 19th for 50% off their sale price of $3.77 a bag. Too good of a deal to let them spoil.
No rust spots on anything, just crazy!
