    Last night I simmered up a pot of Stuffed Pepper-Style soup. Used 200 grams of extra lean ground chicken instead of the
    500 g of ground beef in the recipe. It was just enough to flavour it. Used up the last of the opened carton of chx broth and
    the 1/2 can of diced tomatoes. Diced up a couple of bell peppers who should have moisturized ( get it? wrinkling ), plus
    other veg. Turned out tasty enough to enjoy a bowl for dinner!

    I have been enjoying the French onion soup aboard the Westerdam. And of course creme caramel, creme brule and pannacotta-basically all custard. Luckily the dining is at the back of the ship and our cabin at the front-so I don't think we have gained much yet! But with 3 more weeks to go anything can happen!

    Another all veggie soup is simmered. ( Delicata squash, cauliflower, broccoli, onion, carrot, celery, bit of pasta sauce, veggie broth, savoy cabbage, bell peppers and baby spinach ). Will be pureeing it when it's cooled, not sure of I want to add a can of coconut milk or not? Hope full I get 4+ servings from this batch.

    I'm so torn as to which soup I want to make first!
    A Thick & Creamy Chx Noodle (Substituting regular noodles with no carb Konjac ones ).OR.....
    Cod & Chickpea Stew ( kind soupy ? ) OR.....
    Haddock & Bean Soup ( I'd be using Black Turtle Beans ) OR....
    maybe go with a ONE POT pasta with Shrimp, Tomatoes and Feta Cheese! ( again using Konjac noodles instead )

    Many useful veggie bits in the crisper to use up for making a soup ( or two ), plus fresh herbs are there too!
    Decisions, decisions. ha ha

    Well the Creamy Chicken Noodle soup was the winner! The fresh herbs I added made it extra flavourful.
    Thyme, rosemary, lemon basil and sage leaves. The only leaves I removed a the end were the large basil ones.
    I also put spinach in instead of green peas.

    This morning I finally got around to making the fish stew, which I say is more of a soup.
    Such a simple recipe. 1 carton of broth was used but now I may add a 2nd carton because
    the amount of spinach that the came from the 1/2 frozen block was more than I expected.
    The black turtle beans are probably also soaking up the liquid.
    The flavour is great! Only onions, garlic, S & P were used ( along with the fish ).

    In early March DH's niece had shared how clam chowder is her favourite soup so DH starts bragging how amazing

    my homemade clam chowder is. So yeah....I finally made up a cauldron of it this morning. Enough to bring

    his niece 2 large mason jars filled up with plenty left for us to have for dinner tonight.

    made a pot of homemade chicken soup..at 1 a.m. .....for my stupid cold! ugh!!!
