This morning I used up the leftover filling from when I stuffed the Manicotti shells on Monday.
It was a mixture of Feta, Mozzarella and Swiss cheeses, spinach, grated zucchini, mushroom,
onion, garlic and egg. I " built " a small roast pan of lasagna. Spread fresh sheets of the noodles
with meat sauce, spoonful's of filling, then topped shredded Mozzarella. Repeated 4 times.
This will be for any meal the guys want to have it at.

Lunch has come and gone but I'm having a craving for polenta topped with sauce and freshly grated Parmesan.
It's super easy to make but ugh!!! Why isn't there a cook in my kitchen to do it for me? ha ha

I hard boiled up 7 eggs this morning, debating on making up a potato/egg salad now. Either that or a cold pasta salad
with tuna and crunchy diced veggies in it. Those salads pair so easily with anything.

This batch of chicken adobo is non traditional....ha ha That just means I had things to use up in the fridge so they got dumped into the chx thigh mixture at the end. There was a bowl of drained ( canned ) mandarin sections and about 3 cups of cooked savoy cabbage. They have this taste even better and it will stretch the servings to last beyond a meal or two. I made both Basmati long grain rice and vermicelli noodles ( glass noodles? ) for the adobo to be served on..

Made one of the Butterball Frozen " football " turkey Breast roasts earlier. Made fluffy white mashed spuds, cooked carrot coins and green beans.
Opened a can of Franco American Turkey gravy and called it a dinner! Guys will take this meal in for Friday. I ate mine right after I got back from
the Dentist.

The cold penne salad is chilling, now I'm marinating 8 Marc Angelo pork skewers in PC ( bottled ) Souvlaki sauce.
Made a KILLER Tzatziki dip to spread on them. Will have to grab a package ( or 2 ) of the very soft Pitas today when we shop.
This is all for dinner, the guys won't eat till nearly 7 p.m. so I'll have to twiddle my thumbs until that hour rolls around...ha ha
