Leftover Chinese from xmas eve
Another fab Christmas Day meal has been enjoyed. We did the " courses " thing again, started at 1:30 in the afternoon.
The first was a filling of chicken breast/sweetlet peas/white sauce inside flaky Vol-au-vent pastry shells.
The second was butternut/ricotta/chestnut filled ravioli, with a clementine buttery sauce, fresh grated nutmeg and Parm garnish.
Then came the big scoop of Waldorf salad with a side serving of various cheeses.
The 4th course seemed to be the biggest hit, thin slices of pork tenderloin filled with feta, asparagus and spinach, served with melon balls

We all took a breather to chat, exchange small gifts, sip more wine....snuggle with the furbabies.
Then 2 more small courses, a skewer of grilled garlic shrimp over veggie fried rice, followed by corned beef sliders with corn on the cob nibblers.
Another longer break was fully necessary......then we bravely tackled the final traditional roast turkey meal with all the fixins.
This year I jokingly made up a small bit of mashed sweet potato, topping them with mini marshmallows. I have always made fun of people who add more sugar to sweet potatoes but this was actually delicious...ha ha
Dessert and coffee was put out on a buffet table at 10:30 p.m. We all did our best to eat some of each sweet, but there is only so much room in our tummies.
We had 3 dinners to go to. First was hubbys mom, she made ham,mash,yorkies,gravy and brussels
then we went to my parent's where we had turkey,mash,cabbage rolls, marinated salad and pudding
then we went to my hubby's dad where he made ham,pudding,dressing,yams ,spring rolls and pancit (filipino noodle dish) which is delish btw.
so much food.
we are blessed.
Tonight is leftover turkey stew
It's been a wonderful Christmas so far!! lots of great food so we are all indeed blessed!! Today I have to go through the fridge and decide what stays and what goes. I did get an ActiFry for Christmas but haven't tried it yet as well as a waffle bowl maker so excited to try both. Boxing Day night ended up with a huge pop up Christmas party, had about 40 people at one time. Luckily there was lots of turkey leftover, so I made turkey salad and used mini brioch buns and made sandwiches with leftover cranberry & stuffing, they were yummy!! Wings and I had made a cheese ball earlier in the day and lots of munchies, cheese, cracker, meat, pickles, etc. I'm a little scared to turn on my Christmas lights tonight hee hee...but all are welcome and the more the merrier!!!!
I have been in hiding and although I cooked last week not a lot of inspiration more of a what can I get on the table fast.
This week is improving, tonight I made: Mexican Rolls ups which had Taco Seasoned Cream Cheese, Taco Meat with Mushrooms, onions and Peppers wrapped in a tortilla. Also made a Bacon Ranch Salad to go with it
I have a lovely beef roast to go in the oven later, I might open the Actifry (T-Fal Air Fryer) and try potato wedges..coleslaw and have leftover rice so might make fried rice as well

So tonight will be whatever is in the fridge.
Turkey stew again
I am currently putting the makings for a Spaghetti Sauce into the crock. when i get home, it will be finished off with a caesar salad, bread and some nice red wine.

Happy New Year to all my wonderful SC friends!!! It was a lovely New Years with lots of great food, family, friends & fireworks!! Not long home from a big turkey dinner at my uncle's house so will be spending the evening zzzzzzzzzz :)

Last night I got side tracked and totally forgot about dinner. I took some small Chicken Chunks from the freezer put them in a pan with some pesto, lemon zest and juice and baked for 30 minutes. On the side I took some leftover rice from the fridge added sauteed Onion, Yellow Peppers and Mushrooms and that was dinner.
It was actually really good and surprising considering I totally forgot about making dinner.
Tacos tonight
Found a bag of marinated Chicken in the freezer that had lost it seal so I will cook this up. On the side I will use up some leftover mashed potatoes we have in the fridge and make Mashed Potato Bake. Not sure on a veggie yet but thinking it will be Salad as we do not have many veggies options at the moment.

Last night hubby made blade steak with baked potato, green salad and marinated beets.
MIL fixed hamburgers again. Just thick 2-3 inches tall patties, velveeta cheese and your choice of condiments. This is the 3rd time we have had hamburgers in 2 weeks. We still have 5 more days until we fly home. I want a salad :(
Last night we just did a mix plate of snack type foods, we had:
Melted Brie with Peach Jam
Shrimp Ring
Naan Pizza x 2 (First one was Pepperoni, Bacon and Cheddar, Second one was Pesto, Sun Dried Tomato and Parm)
The last day of Christmas- Old Christmas Day!! We celebrate it the same without all the gifts. I'm baking a ham today and making a bunch of salads (potato salads) macaroni, etc
I have been enjoying the Air Fryer...mine is a 4.2 L and supposed to feed 6 people but as Thatdone stated it will not feed 6 people, perfect for a couple of people. I've cooked fries, potato wedges so far and wings (with breading) turned out crispy and delicious and yesterday I panko crumbed chicken breast to make chicken burgers and done to perfection in 15 mins (flattened chicken breast) . Easy to clean up too!!
Tonight we feast on veggie burgers with a big salad.
