Popped in a couple of frozen quesadillas I grabbed at Costco in the oven accompanied with a glob of sour cream. Hit the spot nicely.
Indian curry chicken with cauliflower and potato on a bed of basmati rice.
Pork Chops breaded in seasoned Flour with Mushroom Soup over Rice.

this was the oven "fried" ravioli with marinara dipping sauce and shredded romaine salad with Granny Smith apples and jalapeņo ranch dressing :P
Tonight will be buffalo chicken wings and homemade tater skins with salad :top:
DS had leftover enchiladas (I found some tortillas in the freezer, otherwise he would have gotten just the meat/bean mixture). DH and I had simple baked chicken thighs and potatoes.
Tomorrow I'm buying more chicken thighs and tortillas at Costco, going to make a big batch of 'Zonny style' enchiladas for the freezer since I have a LOT of homemade refried beans (that are not fried at all) to use up, as well as a lot of salsa from my Costco Tostitos jug I bought after Christmas. Besides, DS loves them. :)

I am exhausted. Our 16month old son has not slept well in at least 4 nights. We made M&C, Schneider's sausage, boiled peas and a glass of milk for supper. LO loves that type of sausage.
I had a really big garden salad with all the fixin's. I added a couple janes chicken strips that I diced up for some crunch. the kids had leftover turkey tacos.
i made curry chicken thighs and asian inspired pork tenderloin will serve with rice or sweet potato
this should last me over the weekend.
Need to use our $10 KFC coupon from December, so will get the Family Feast tonight.
Lunch & Dinner was pizza with potato wedges, cesar salad, cheddar mozza breadsticks, chicken bites, I was against ordering in but caved if mom agreed to come help me clean up the basement.
I bought a bunch of Catelli jarred spaghetti sauce at No Frills today for $1 a jar, so it was spaghetti and meatball night! I also got a ham for $1 a pound, so that's what I'm cooking tomorrow.
Yes nice to see the Catelli on so cheap-it is my favourite kind and I only remember seeing it that cheap once before at Walmart-a good bargain to stock up on. Tonights dinner will be homemade pizza and homemade wings-better throw in some raw veggies for good measure!!
