The chili alarm just went off in my kitchen. I left a note for the guys to do all the veggie dicing, I suspect it was done around 2 a.m. ( when they are up....lol ) I went to bed like a normal person.
This batch was so easy to make up just now, the soaked beans took 6 minutes to soften in the pressure cooker, browned the meat and onions, spiced it up and added the pasta sauce and veg.
Covered and low simmered for an 1 hour.

Our plans for dinner changes last night. I did not realize how late it was when I made lunch so we were not hungry for a big dinner so instead:
I pulled a bag of Cooked Ground Beef from the freezer, sauteed up some mushrooms & red peppers, added some of the Pasta Sauce I had simmering in the slow cooker all day and some leftover pasta we had in the fridge. Then before serving I topped with Cheddar and Parmesan.
This meal used up some leftover pasta, a red pepper with a soft spot and some mushrooms we need to use this week. I love meals like this as I am not sure why but we seem to have a lot of randomness in our fridge this week so working to use it up.
Thanks everyone for the birthday wishes! it was a great weekend :)
Tonight is cauliflower risotto
potato chips! lol
Dinner for one from the local Chinese place.
taco fries; leftover taco meats over french fries (cavendish fries currently on sale $1.96 - $1 printable coupon)
Burgers and salad/sweet potato fries. Something simple and good!
DH has requested a Butternut squash soup for Sunday. Good timing! I just bought a B.Squash on Saturday.
Decided on Chicken Enchiladas with Mushrooms, Onions and Peppers. This has become a go to in our household, so quick and easy to make even with making our own Enchilada Sauce. Bonus we usually have everything we need on hand.
One thing I did learn Whole Wheat Tortillas are a must, White Tortillas do not stand up to the sauce during baking.
Spaghetti with roasted 3 colors peppers on top and swiss gouda cheese!!! :) I have peppers to use up!!! :) Happy monday!!! :)
Cauliflower soup and pizza-both homemade.
Its going to be a nice afternoon, sunny, not much wind so might try and squeeze in a bbq!
something simple and I have some veggies to use up ...so turkey sandwichs with veggies and ranch dip :)
Sides from the "garden" to go with supper...roasted beets, beet greens sauteed with bacon, garlic & onion..and carrot and tomatoes for a salad

Lost track of time yesterday working through a work mystery so I had to to get creative. We had BBQ Chicken Sandwiches with Homemade Air Fryer Fries
Tonight will be Lasagna, Caesar Salad & Garlic Bread
there is still yummy chili in the fridge BUT I came in here on a search for a new dinner idea for when that chili is gone!
Tonight will be roast pork and roast lemon Greek potatoes with tzatziki-plus baby Brussel sprouts and pickled beets.
spagh with homemade meat sauce and garlic bread. Also cut up a batch of veggies and made some dip (very simple: Miracle Whip and Ketchup, mix to taste).
Chicken pot pie with homemade fruits ketchup chowchow, zucchini relish and beets with a salad and cheese
The request tonight was something different so I made:
Pierogies Bake which I have not made in over a year with a Caesar Salad
I ate bacon and eggs for my dinner tonight, guys had late lunches, but requested we bake up a tray of my frozen homemade Empanadas later tonight for them.
Yesterday I thawed the large ziploc bag of homemade chx broth from when I had made a vat of chx soup a couple weeks back. I also had frozen 3 sandwich sized bags filled with the meat, veg and noodles separately.
So....once put together and simmered it was just as good as when we ate it fresh.
With the nip in the air, soup is the answer!
TGIF!!!! :) I have seriously no idea and I want something fast easy and simple so since it is friday I will maybe just grab poutine or pizza will see how tired I am yay friday!!!! :) still need to do the grocery this week end..
Tonight we are going old school, growing up we lived with my Grandparents and Great Grandpa and if my Great Grandpa was making dinner this was dish he was making:
Potatoes, Carrots & Onions in a baking dish, topped with Pork Chops and a Mushroom Soup sauce poured over everything and baked.
Mmmm, so basic and extra yummy @SassyAshley
Seems Great Grampa knew what he was doing! Enjoy.
It is empty the fridge of what's leftover for dinner. A bit of some chx noodle soup, some chili over hard shell tacos with cheese melted inside them first, Empanadas and perogies.
Starting fresh this weekend, but not sure with what yet.
