For us it was yesterday.Tonight maybe a chicken cranberries mashed patatoes yelllow beans and maybe a butternut squash soup since i have 2 container i need to use up..it is kind of a me night.dad working,happy saturday to all :)

I'll be having another bowl of a freshly made batch of pumpkin soup. Had one at lunch, it was so creamy and delicious. Small squares of very thin crust pizza to accompany my soup. All within the allowable calories. A couple of shrimp with sauce too!
Im trying a new pulled pork roast. It’s cooking low and slow in the oven. We’ll have it with coleslaw, possibly fresh veggies with home made dip. Probably have it with French bread because it costs a lot less than fresh buns.
In case anyone is looking for inspiration. It is winter break in SK, so I’m home with our kids for the next week. Here is my general meal plan for the next several days.
Egg and cheese wraps with sliced apple sprinkled with cinnamon.
Burgers with home made sweet potato fries, fries & onion rings, fresh veggies with dill dip.
Roast chicken, lemon potatoes, steamed California mixed veggies.
Chicken salad sandwiches with tossed salad.
Dry fried pork chunks, noodles, mixed veggies.
Deluxe salad - lettuce, cucumber, salad, pecans, cranberries, marble cheese.
Home made treats
Chocolate pie
Confetti squares
Apple crisp
Cream cheese sugar cookies
Oatmeal chocolate chip cookies
Tonight it is still a mystery ..grocery shopping day later !!! :) Happy Sunday !!! :)
EDIT We will have tacos with all the fixings .Ground beef was in sale pm super c and I have cucumber and tomatoes that need to be used up!
Decided on Smothered Pork Chops in Amazing Mushroom Gravy (new recipe to try) with Mashed Potatoes and Green Beans on the side
Tonight's dinner will be a seafood bonanza! ( well, as much fanfare as I could fit into my 315 calories....lol )
3 x medium mushroom caps " stuffed " ( giggle ) with salmon and ricottta, then broiled.
2 x large shrimp with 1 Tblsp sauce.
50 grams Bay scallops, sauteed in garlic + green onions, dusted with red pepper flakes.
114 grams cod fillet baked in foil with dill, green onion + lemon slices
1/2 c. green beans.
DH made a killer chicken/rice soup late last night, ( for him and DS ) so figuring that will be one of the items on their dinner menu.
I had originally planned a nice Steak dinner for this week but I was not feeling Beef today so now we are having:
Baked Chicken Breast with Roasted Potatoes & Roasted Lemon Asparagus, same sides different protein and dropped the sauteed Mushrooms & Onions.
KFC chicken wraps. We're gonna use leftover KFC chickens. Already have tortillas, lettuce, tomato, cheese and dressing. Pepsi to drink for me
Tonight Lasagna. Cooked the beef this morning and will make the lasagna later this afternoon and pop it in the oven.
Tomorrow- Shrimp/steak, ceaser salad, fresh asparagus, mushrooms/onions and fries in the air fryer for those that want them. (mission freezer clean out)
Last night we had leftovers from the night before which was a quick and easy rice with sautéed zucchini (it was dangerously close to going to compost :yikes:) leftover onion , garlic and canned tomatoes with lots of oregano and chilli flakes with cubed marinated tofu and I roasted up an acorn squash with garlic oil. Pretty good.

Tonight we are going to try 20-Minute Chinese Ramen Stir-Fry, I do not have any Ramen but I have some Chinese Noodles I can use instead.
Bit of a change in our meal plans because I picked up discounted meat from Sobeys today.
I turned 2 trays of extra lean ground beef into 100 large meatballs. I’ll put those in the freezer for future meals.
Tonight’s supper is chicken, perogies, steamed California mix veggies.
If this pain goes away ( post procedure root canal pain ) I will enjoy my pumpkin soup ( again ) with some thin fake crust bite sized pizza squares.

I had been planning Roasted Cauliflower Soup with Homemade Focaccia but Mom said she was not feeling the Cauliflower so quick pivot and now it will be Baked Potato Soup with Homemade Focaccia
we're still trying to use up leftover so chicken quesadillas for tonight
I think DH is making homemade chicken fingers-perhaps some potatoes and cauliflower alongside.

Last night I made chilli so tonight was leftovers and I roasted potatoes and made tofu feta cause I love it so much and it’s great protein source.
Tonight is steak fahitas! Steak, mushrooms, onions and peppers all cooked and ready to heat and eat!
Kitchen is clean and space in dishwasher for us to rince our dishes and put in when we are done!
I have one small serving left of the beef stew I made for my diet plan, probably that with a dish of coleslaw, maybe a dessert dish of Greek yogurt and diced fruit? Still up in the air regarding the tooth, but thank you all for your kind comments and well wishes! This a.m. was the first I woke up with no throbbing pain, so I avoided having to pop one of those awful pain pills.
( side effects from them can be almost not worth it )
We got home late after work and grocery shopping so it was a Caesar salad with tofu feta and a backed potato with salsa. Simple and fast and that’s what I needed.
hubby is in charge of dinner tonite and he'll be making pork chop in a mushroom gravy sauce; roast or baked potatoes and steamed baby carrots.

I nearly messed up last night with my dinner. Here I was enjoying the last of the beef stew, a 1/2 c. stewed tomatoes, a c. of garden salad and just less than a c. of red pepper/cauliflower soup. I was so full and thinking " gee, I might not have room for my snack later ".
Good thing I read over my notes. Here I had gobbled up TWO portions of the stew instead of taking half. So, to play off of the Seinfeld quote.....
" No snack for you! " . I cancelled my night time snack to stay within the calorie guidelines.

I have not been outside today but it feel a cold day here and I want something comforting so I am making Beef Stew with Carrots & Potatoes and Homemade Dinner Rolls.
making spaghetti tonight with garlic bread. Making my own garlic butter also.
Today I am making stuffed peppers as I have some leftover rice and plenty of peppers-should be enough for a couple of days.
