FreshCo $1.50 /pound fresh whole chickens!! ( limit of 2 ) Mmmmm, One is almost ready! cooking up so crispy in the Air Fryer.
I have some Leftover Pasta in the fridge we need to use up so I am thinking of making Slow Cooker Garlic Chicken Alfredo. You add Broccoli to the Slow Cooker with the Chicken so we will just need to heat up the pasta and serve.
Beef tenderloin (it was on sale earlier this week)
we're going to try to make proscuito/swiss cheese wrapped asparagus
and a yam
We're going to try a Chicken Jumbalaya recipe using some leftover hot italian sausages we have.
We're going to try 3 of the 7 features on the high tech Instant pot we rec'd as a gift. Saute, crockpot and warm
Meat balls in gravy over mashed potatoes
hubby is going to pick up pizza hut $5 deal for him and the girls, a hot soup at a vietnamese restaurant for me.
Not sure just yet, but some of these creations will be served around dinner time, perhaps sooner.
Thawing 2 large sheets of puff pastry now. I'll be altering one recipe using creamy goat cheese instead of ricotta.
It's a carrot coin/cheesy tart thing. Savory herbs involved. The pictures get me drooling!
Next is to make a few Italian pinwheels because that recipe sounds so simple and had like 4 ingredients.
I may have to thaw 2 more rolls of pastry if I want to make up a batch of Beef Empanadas, but those I can fill, freeze, bag and bake later.
The last recipe I chose just to use up some leftover ham, it's a spicy ham/pineapple tart. Those are squares of pastry with the mixture all piled in the centre.
WOB-do you have a beef empanada recipe you can share? Thanks
@walkonby you will have a very productive morning . Everything sounds delicious that you are making
Beef stew in the crock pot and chocolate cake for dessert.
half a ham with mashed potatoes and steamed brocolli
BBQ chicken and veggies.
leftover Chicken Jambalaya. It was so good...I was kind of surprised how easy and good it was. We didn't use the instant pot, just did it in a large pot on stove.
Comfort food to supper tonight. Im making an old fashioned meatloaf with mashed potatoes, gravy, mashed carrots and turnips with some honey and a big green salad with tomatoes, cucumbers, green onions, diced celery. I dont use any tomato sauce for my meatloaf.
Tonight will be Steak Sandwiches with Mushrooms & Onions and I am going to try my hand at Smashed Baked Potatoes. Will probably also make a Salad to go with it.
@lizzie bargain I did not make the Beef Empanadas just yet because I used up all the thawed puff pastry on the other 3 recipes...lol! Some new pastry is now thawing, so maybe tonight I'll get new energy to make them up......or tomorrow.
Here is the recipe I found online.
Now I must say I always bought Filipino empanadas when I was still working ( SO delicious ) and theirs had potato filling with whatever traditional spices they use.
These have no spuds in them, but they do have raisins?? and olives?? Weird huh?
I decided to try them anyways.

Here are my 3 Puff pastry creations...omg! the spicy ham and pineapple things were the most delicious and sneaky the way the heat of the crushed red pepper flakes sneaked up on ya!

Thanks WOB-it all looks yummy.
BBQ ribs with baked potatoes
Im new to air fryer recipes (granddaughter gave me the Ninja Foodie at Christmas). Ive made a few things like french fries, greek potatoes and fried chicken with just salt and pepper. Now i would like to know if i can make fried chicken in the air fryer using a fried chicken recipe which includes dipping the chicken in egg/flour mixture and spices. I have a copy-cay KFC recipe for fried chicken i would like to try. So can i do that in the air-fryer.
Last night's supper was different. I wanted to make a meatloaf but i didnt realize i defrosted minced pork. I made the mince pork like i would a regular meatloaf but added lots of garlic. It turned out pretty good and i roasted the potatoes instead of mashing. Hubby said it was very good. Me..... im undecided. Oh and we had mixed frozen fruit for dessert.
Baked up just this many of the Beef Empanadas, the rest are getting solid in the freezer, then will be bagged.

I made lasagna for dinner. We'll have it with a mixed greens salad.
baked potato, roasted chicken, asparagus, etc
Leftover homemade lasagna. DH is loving the homemade meals versus a frozen lasagna from the store. Definitely going to try the Beef Empanadas @walkonby , raisins on my list for this week.
making beef stew later /dumplings (I buy clods of beef from a local butcher and cut them up into roasts for the slow cooker and stew meat. Its very good!)
Tonight will be Garlic Ginger Pork in the Slow Cooker, it is Asian inspired. I will serve it over Rice and Stir Fry Veggies
