last night was porkchops mashed tatters corn
I have not been feeling good for the last three days. Last night was gingerale and original Old Dutch potatoe chips. Kind of wish I did not have to teach today.

Supper tonight will be honey garlic boneless pork, homemade crispy potato wedges, and a Caesar salad. Hm... there are about a dozen cabbage rolls left, so they will be dessert!
This weekend I was at my parents and I think I ate enough for the month! lol
Friday when we arrived - Home made chicken noodle soup (noodles were GF!) then we had a snack plate which consisted of feta cheese, smoked salamis, roasted red pickled peppers, and fresh bread (none for me :()
Saturday - Baby back ribs, with potato wedgies and salad with tomato, cucumber, and feta cheese. For dessert ice cream Mmm
Sunday - chicken soup, Cabbage rolls, veggies for dessert homemade cheese cake
Monday - Turkey, mashed potatoes, homemade cranberry sauce, sauteed veggies in garlic and butter, gravy, roasted butter nut squash for dessert, cheesecake and apple pie with ice cream
Tuesday (day we were leaving)Roasted red pepper soup, hot turkey sandwiches with left over mashed potatoes and asparagus and the last of the amazing cheesecake!
Tonight were having the cabbage rolls my mom packed up for me...there to good to go to waste :)

almost coconut-like shavings she has on the top of hers...
It looks wonderful!!!!!!
But how do you shred it to look like that? Maybe chiffonade it?:shrug:

oh no i dont do any shredding the filo comes like that the only places i can find shredded filo is at Arab stores and its called kadayif dough then when im using it for this particular recipe i chop them up then bake/cook them in butter and sugar until they go golden brown then i add in the walnuts

ill write more in detail when i can i had lamb shanks ready for tonight's dinner (thanx to my dad who roasted them in a beutiful rosemarry sauce last night) but when i went to the fridge to see what veggies we have to make a side dish i realized DH finished all the shanks last night so im in desperate need to think of something for dinner :shock:

I'll make chicken stew - with noodles, because those I'll be able to eat later.
Friday night: Philly cheese steak sandwich. Thin sliced flank steak, onions, peppers, provolone cheese, cheese spread and a bit of pesto. With Potato salad. lol Im thinking ahead. :biggrin:
Muhalebeli Kadayif
Ingredients for the shredded filo
350g kadayif dough/filo
3 tbsp butter (unsalted)
5 tbsp sugar
1.5 cups crushed walnuts
Melt the butter and add in the sugar stir until most of the sugar is dissolved but make sure the butter and sugar doesn’t turn brown while that is going about chop up the shredded filo then toss it into the butter mixture and stir around until the filo becomes golden brown once this has happened add in the crushed walnuts and mix again remove from the heat and set aside
Ingredients for the pudding
1 L milk
4 tbsp flour
3 tbsp corn syrup
1 cup sugar
1.5 tsp vanilla
1 egg yolk
200mL 35% whipping cream
In a pot mix everything except for the cream and vanilla keep stirring until it boils once it starts to boil wait 3 mins then turn off the heat and let cool for 10-15 mins
Now put everything in a blender or food processor add in the vanilla and cream and start to mix for 4-5 mins once your done blending put the pudding aside for a bit until it starts to thicken once you see that the pudding is thickening take half shredded filo mixture and pour it into whatever your going to be serving it in and cover the entire bottom now pour the pudding on top cover the shredded filo and now pour the rest of the filo mixture on top let cool and toss it in the refrigerator
Serve cold and enjoy

Pumpkin Pie Through a Straw
This recipe is for one 350calorie smoothie, but it is huge and could easily serve two.
Blend together and top with a sprinkle of cinnamon.
- 1/2C vanilla frozen yogurt
- 1/2C nonfat plain Fage
- 1C pumpkin puree
- 1T maple syrup
- 1/2C skim milk
- a dash each nutmeg pumpkin pie spice
In your case I dash (or two or three) of rum might help, also.
FOR medicinal purposes, of course!

Now. There is no Arab store in this little town....so tell me: when you buy the shredded filo..is it dry? What I'm thinking is...what if I chiffenade the filo, let it dry (like THAT'S a challenge! lol), chop it up, then continue with the recipe?

Lynn, I just have to break down and not be scared to try making baklava - it's SO expensive to buy, and we have only one specialty store (a cheese store of all places) which actually makes it really good.
Oh, I forgot - supper is a 'whatever you can find' meal tonight. My eating has been mostly off - I just had some chicken soup and soft toast at 3, so when the guys come home, they can find something - sammies, cereal, whatever....
Today they had a company-sponsored lunch out at a buffet place, so they usually aren't awfully hungry for supper on those days. However, knowing my husband, who isn't a lunch-eater, he probably didn't go, and just worked through...
just made some speghetti with meat sauce mmm soo good!! and cinsidering the noodles are gluten free they're pretty good too
