salmon with brussel salad and slice of toast.
Made some sorta casserole - had several small chunks of beef that I knew would be tough, so I sliced them thinly into strips, marinated them most of the day, then slow cooked for a few hours in a roaster with onion, celery, peas, carrots, cauliflower - in some sorta broth/sauce I just threw together, along with spices/herbs.
It actually turned out past 'just chewable' into 'eatable' - and the flavours were great. Served over curry rice, and I had lettuce with dressing.
I made burgers on the bbq :)
Going to make some sweet & sour meatballs and egg rolls tonight.
Quesadillas with scrambled egg, onions, cheddar and mozza.
I finally got around to cooking a picnic ham. I pulled it out to thaw over night and I will roast it today. Not exactly sure what we will have with it. Depends how I am feeling later in the day. I always love pineapple with fresh roast ham.
Tonight is zucchini and ricotta lasagna rolls and a big green salad with peppers, cucumbers, beets.
I am going to have bbqed chicken again tonight since I decided to break into my Uncle Ben's coupons. Last night was pre-marinated by Walmart chicken breasts with corn and coleslaw.
Tonight I am making bbqed thighs which are already marinating in a Balsamic mix. They will be topped with blue cheese right after they come off the bbq. On the side portobellos fried with red onion and jalapenos and possibly a salad.
Turkish pearl couscous salad
Pork medallions in a mushroom sauce on a bed or rice and Brocolli.
BBQ chicken wings, potato salad, green salad with a vinegar and olive oïl dressing. Yogurt ice cream for dessert.
I planned on having steak, potatoes, and peppers on the bbq with salad, but this might be the last day for a while that is under 90 degrees, so I might do chicken burgers and save the steak for tomorrow. Were suppose to be in the 100s by Sunday, so I'll be cookin' for dinner - literally, lol. That might be take out or restaurant night ;)
Yeah same here. We are surprisingly getting rain here right now, but we need it since we have pretty much blown through our wild fire budget already from the cigarette smokers carelessness...(save that for rant thread :rolleyes: ) But we will be in the mid 30s over the weekend.....so bring on the rain for now. But stop for Friday!! I will be camping!
