..on Good Friday we always have fish..I already had cod this week so for something different I'm going to have lake smelt...I p/u fresh last time I was off the island and squirreled away in the freezer, so will pan fry those until crispy and golden...I have a secret recipe that includes soaking in vinegar and then dipping in a chicken batter (instead of flour) and pan frying using fluffo (but I'll probably use a combination on EVOO and butter) :)

There's a pork roast in the slow cooker. I was thinking about making scalloped potatoes to go with it.
Poker night so looks like pizza, wings, samosas and whatever the guys want!

Inside-out stuffing: 1/2 bunch celery and 2 onions diced up and fried in the margarine called for on a box of Stovetop stuffing until tender. Add 1/2 the water, the stuffing crumbs, and 1 sliced shredded chicken breast.

Decided to do our Easter Dinner tonight and was done all with stuff we had on hand. From the freezer a Ham & Mixed Veggies (Cauliflower, Broccoli, & Carrots) and Potatoes I bought last week on sale and would have bought no matter what.
Happy to not have to spend extra $$$$ on a holiday meal
Prime rib steaks, baked potatoes and broccoli on the BBQ with a Greek salad, Apple blossoms and ice cream for dessert.
Last night we had oven baked chicken thighs with leftover raw veggies and macaroni casserole
Ham, potato casserole, carrots, homemade buns and spinach salad. Cake is being brought my DS's girlfriend as it is his birthday tomorrow,
egg salad sandwich and chocolate pudding
