..yesterday was bbq prime rib steak, baked potato, beans and steamed broccoli...today will be bbq'd homemade burgers & probably a salad

Yesterday I put a can of corn, a can of black beans, chicken breasts, salsa with cumin and garlic in the crockpot and cooked it for a few hrs-delicious especially when served with a spoon or two of sour cream. Rhubarb crumble for dessert.

Sadly the diet isn't too exciting yet. Last night I had Pasta Boiled in Chicken Broth to make a little bit of a Pasta Soup.
Tonight I am going to try boiled potatoes and pouched Chicken Breast.

..went to the cabin today to check on things since the last winter trip (everything was A-OK) while I was gone, cooked in the slow cooker a beef roast, potatoes & carrots, etc and when I got home made gravy from the au jus and added corn & fresh dinner rolls...going back to the cabin tomorrow for the entire weekend, very excited!!

I did a " project " yesterday. My very unique hand crafted ( built by DH over 35 yrs ago ) massive wooden spice rack is all reorganized, restocked with fresh herbs & spices, with all bottles getting new labels..... It looks so purdy! Now I just gotta cook! ha ha

We were going to stay up north for another day but just could not deal with the black flies.

Made the guys up some things to nosh for the next few days. A rather deep nacho/taco/ layered dip. Mixing chili powder into the cream cheese , then pouring a layer of liquid taco sauce in between the grated cheddar and lots of colourful fine diced veg on the very top. Tostito Scoops work so well, just fill the wee cup up and Yummo!
I am sure this will get dug into tonight during the two games on tv!!
Also made quite a large pot of spag/meat balls and then pan fried up a sausage/red skinned potato casserole ( we still call this a casserole although it never reaches the oven.....lol )
Lastly, I baked up my very first strawberry/rhubarb pie.
( deep dish using fresh rhubarb and strawberries ) Super simple as far as the filling goes.
( DH favourite pie, but I was always intimidated to try making one )
It looks so rustic like it was baked by the Mennonite's or something.

Starting to get back to eating like normal again, tonight we are trying Pasta with Meatballs in Tomato Sauce, will probably go easy on the tomato sauce just to be safe.
