Needed a break from cooking, so we had hotdogs, and I had some cucumber to go with.

Today was the first time in I think ever...epic recipe FAIL!
I bought a big bag of basmati rice recently, was looking for creative things to do with it, found a recipe for lemon rice. I love lemon, it sounded great, and had wonderful reviews.

I like to try new recipes, allrecipes.com is a go-to site for me. Some recipes turn out great, some need tweaks, some are just OK, never are they a total fail. I think this was the first new recipe I've found online and tried that was completely inedible. It tasted bad, and smelled worse! I think that part of the problem was the big, beautiful lemon I bought today for it. It was too big, provided at least half a cup of juice, and I think that was its downfall. Too sour!
The leftover burgers I grilled the other night and the salad I made were still awesome (bought romaine at Costco, so cheap but too much, we're eating salad for awhile!), as was the plain basmati rice I cooked after.

Tomorrow I plan on making a mushroom sauce with roast ham in it, served with pasta, balsamic vinegar and oil to dip some whole wheat bread in, with a glass of milk. I might make banana chocolate chip muffins tomorrow, so we could have those for dessert.

I have lots of leftovers from the schnitzel, so will heat that and will make a toasted club sandwich and a salad with lots of fresh veggies & French dressing.

With the second chicken I had roasted Monday, I had been using white meat for sandwiches, so took off the rest of it - then cut up the dark meat to use in chicken stew. I had some with leftover smashed potatoes and fresh French bread. Husband will first have the bones and carcass stuff and skin, with fresh bread and potatoes, and he can always have stew, too (though he usually doesn't have room).

Tonight was easy- we had a vegetarian quiche-with artichokes, broccoli and peppers. Even better it was prepared by the school chef and given to my husband who had helped him in the kitchen. It also came with a ceasar salad- but I figured since the quiche covered all the food groups I would have my salad for lunch tomorrow. Can't beat a supper prepared by a chef in my opinion.

Gee, being creative is taking its toll! Had leftover hotdogs in fridge, so sliced them thinly and fried them up with some jarred sauerkraut, added onion and garlic powder, and Italian seasoning - would have been fine for me, but husband isn't a fan of the sharp flavour, so I knew I had to make it sweeter - spotted some Pepsi on the counter - added some, and sure enough, just sweet enough to mellow the taste! Necessity is surely the mother of invention!
Husband had his - along with tons of pepper - over leftover mashed potatoes, I had mine over pasta. It turned out really good, lol!

I wasn't well prepared for dinner, so stopped at Sobeys on the way home and got some spaghetti sauce and garlic bread, pulled some homemade cooked meatballs out of the freezer. The sauce that was on sale was Ragu, it was OK, but I still prefer the Catelli I normally buy. I hope it goes on sale again soon! I bought at least a dozen jars last time it was $1 at No Frills, but they're all gone now.
