As for the week DH is gone, I will be having a blast in the kitchen cooking everything he doesn't like: roasted tomatoes, tomato pizza or a tomato tart, tomato sandwiches, tomato anything.... Plus some rapini on the side and maybe some eggplant parmesan for good measure Then again, I may just get lazy and start making yogurt parfaits for the meals when I'm not super hungry

Taking a couple of the grankids camping today for the weekend. So for me it will pretty much be a work weekend. Get the cabin restocked and finish cleaning up. Set up the 5th wheel trailer and also restock and get everything set up for the season, so I want easy meals this weekend.
I made a big pot of not so spicy chili (grandkids), I will just add some saracha to mine and dh's, and made bread last night. I will take that. So for the second night, I will be making bbq chicken with baked potatoes and corn on the cobb. I picked up some cherries from RCSS yesterday for desert (we all love that first taste of summer cherries ). Pretty easy meals with sammies and hotdogs thrown in for snacks and campfire smores of coarse........what would camping be without smores

I took out chickhen breasts from the freezer...so I guess I need to do something with those!! I am now making meat the side dish and rest of the main part vegan Hopefully slowly I can just stop the side dish!!

well DH and DS will be eating greasy and good comfort food at work tonight. Those chix legs that NF had on sale baked up nice in the crumb mixture, then boiled some red skins and opened that very large can of pork'n beans.
DD and I will munch on the individual sized shrimp/pineapple " pizza" I made yesterday ( from the 6wbm cookbook recipe) and then add another carb and protein each.
Who knows what the coming weekend will inspire me to make for us?? Been having a Gai Lan craving all week, finally last night I ate 1/2 a bag steamed!

These are a few of the things DD and I eat regularly on the 6wBm
from top left..individual pizza dough made from oatmeal flour, with veg and shrimp and pineapple, boiled redskins and spicy homemade chicken breast strips, basmati rice with lemon chicken ( water chestnuts, snow peas and carrots), roasted sliced turkey breast with cranberries sweetened with Stevia, and veg only hot and spicy chili. ( we put that over rice or rice noodles, and add a protein to go with it. So far so good.
