I hear ya @Mechman47 ( regarding the orzo salad ) ha ha .
That was one reason I cooked up mostly protein today. It was an attempt at batch cooking for the week for the guys work meals but also gave me a chance to clear out some space in the freezer.
They now have roast beef ( blade cut ) with onions, a roasted whole chicken, a stuffed turkey breast roll
( one of those pre-made numbers you cook from frozen ) and 2 Dr. Otekers cauliflower/beet crust pizzas.
I am leaving it up to them to toss some form of a veggie ( canned or frozen ) and possibly a carb ( we only have Bistro Express rice pkgs atm ) into their meals but it'll be their choice.
Not really feeling the cooking things today, over did it yesterday and just not having a good day so I just grabbed a package of Homemade Pulled Pork from the freezer and going to have that with a Buttered Bun and Cesar Salad
I had a great fathers day with dinner last night brought up north by my oldest daugter, her husband and my grand daughter. Then we stopped on the our home at my sons and daughter in law for a late lunch/dinner. And when I got home there was a nice dessert prepared by my youngest daughter. Its nice to have such caring kids
Gosh, I have missed drooling over everyone's food!
Have been cooking only on weekends, a few meals during the week are sandwiches or leftovers from takeout.
Today, our son brought over ribeyes, husband will BBQ those.
I made funeral potatoes to go with - a fave of the men, but I will only make it once a year.
I just know they will go into a food coma, though, lol!

OMG the steaks were amazing! They were Angus ribeye, so juicy and tender. The casserole turned out fab, too!
@Thatdone - you may have had them, some people call it cheesy hash browns casserole.
The original name comes from the mid-US LDS (Mormons), where it's been the most popular casserole made for family/community/Church events, mostly at funerals. It's easy to make, tastes yummy, feeds a lot of people.
The recipe I use:
Sautee a medium diced onion in butter (4Tbsp) until softened.
In a 9 x 13 pan put the following in and mix together:
1kg frozen diced hash brown potatoes, * thawed in fridge overnight (don't use shredded, and diced real potatoes don't give the same texture)
- 1 can condensed cream of mushroom soup, as is
1 cup sour cream
1 and 1/2 cups grated cheddar cheese
- add the sauteed onion and butter
mix it all together well, stirring in 1 tsp salt, 1/2 tsp pepper, few dashes garlic powder
Spread top of mixture evenly to sides of pan.
Sprinkle on top 1/2 cup of grated cheese.
Crush cornflakes to measure about two cups after crushing.
Add about 4 Tbsp melted butter and mix.
Sprinkle on top of casserole.
Oven at 325 for glass dish - note, I use Pyrex. A metal pan will not give the same crispy crusty yummy sides all around after baking.
Cover with foil, bake 40 minutes.
Uncover, bake another 20 minutes - maybe a bit longer - until bubbly
My note - for the grated cheese topping, today I used about a cup. The cheese I used was a mix of cheddar, mozza, and Monterey Jack (used no name, was not spicy)
When the dish was cooked, it was put back in the oven with heat turned off. We ate about 45 mins later, it was still very hot.
By the way, I have no clue as to the calorie count of the above recipe, and don't care!
No defibrillator was needed!

I can see the name is very appropriate and I understand now why you only make this dish once a year.

I am back to work to today (let's see if I make it the full day) so tonight I already have Chicken Fajita Bake in the fridge, just need to make the sauce and grate some cheese. Pretty with I will serve it over a bed of Romaine Lettuce, like use the Fajita bake like a Salad topper and make it like a Mexican Salad. It extends the Fajita Bake and add some more veggies to the dish
..yesterday I ended up bbqing ribs & chicken, made a potato packet & veggie skewers...it was delicious and there's lots of protein leftover so will just need to reheat and make a salad :)

I do remember my mother making this to go with her Bone in Ham spread every New Years.

I did some prep cooking yesterday so tonights dinner is ready to heat and eat. Chicken, asparagus and green beans. (the asparagus was forgotten in the fridge but was still perfect. I love how hardy it is) And both kids eat it so its a win!
