Today’s dinner: 1 vegan beyond sausage and 2 veggie egg rolls. Also some potatoes and veggies. This eating has really been good for me. May of last year I was 340lbs and today’s weigh in was 231.4..

Wanted to make Burgers, but could not find any in the freezer. Then ended up spending an hour on the phone with my cousin so just made sausage on a bun

..going to friends later for a few drinks, etc..will eat there...I'm going to make something but haven't decided on what yet..lots of dips already so I'll probably be making something with protein...maybe wings, or bbq chicken or honey garlic ribs or meatballs

Found some Zucchini in the fridge what we need to use up, normally I make Zucchini Rolls up but they are quite labour intensive and was not feeling it today so instead I have made my version of a Zucchini Lasagna.
Instead of noodles I used Zucchini but instead of just Zucchini slices, I took two slices of Zucchini and put the filing I normally put in the rolls ups between the two slices. The filling has Ricotta, Mozzarella, Parm and various spices.
Will also make a Cesar Salad to go with it.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

There are now 2 options for the family that I made up earlier this morning for when they all get back here later.
A rich slow simmered homemade turkey noodle soup ( dug Mr. Turkey's carcass from the deep freeze ) and surrounded him with all his friends in the pot! ha ha
There is also a potato/sausage casserole baked thing.
I am feeling sort of Mehatm, so I think I'll wait until later to cook myself a meal since both of those options are off limits to me.

Last evening's roast chicken was delish ... Tonight something lighter ... a new recipe found to deal with all the tomatoes now flourishing in the garden. A tomato risotto. White wine accompaniment.

Last night I made homemade mac and cheese, rice and BLSL chicken breasts. Lots in fridge for tonight/tomorrow.

I guess it was a Mediterranean fridge tip!?
Grilled Halloumi with Orzo, black olives (pitted and sliced), fresh herbs (parsley and basil) , and cherry tomatoes (sliced). Add a pour of EVOO. Pretty simply but it was darn tasty!

Earned 25 AM for buying Metro ( made in store ) beef and chicken kabobs. Grilled the 4 of them up for the guys....lots of chunks of red onion, red and green bell peppers were in between the meat. They can always pair them with a bag of that Microwavable Uncle Bens Bistro Express rice, or slip the kabobs into a soft pita pocket.
