I turned one nice size roast beef(bought in January) into 3 small roasts -for 3 seperate meals was suppose to be when my son and his family came over ,nope not happening so 3 meals for us
roasted potatoes ,zucchini,broccoli and green beans and mashed potatoes -have enough leftover for me
dessert a homemade muffin.with a tea
well, i froze half the turkey (thank goodness), but tonight we are having turkey salad on lettuce leaves, slices of tomato, cucumber, celery with cheeze whiz, olives, cheddar cheese cubes 2 hard boiled eggs with an oil and vinegar vinagrette. Andi made 8 mince meat tarts this morning
Yesterday I cooked a roast beef with onion and garden carrots. I also made mashed potatoes and gravy to go with it.
Tonight we will have leftover beef roast with perogies and salad.
BBQ pork chops with scalloped potatoes
Tonight will be Homemade Meatloaf which I pulled from the freezer with Mashed Potato Bake to use up some leftover Mashed Potatoes in the Fridge. I will also make a veggie just not sure what yet will see what I find in the freezer, we have options so I might just reach in and whatever I pull out it is.

Chicken Tenders with rice (Minute Rice in Chicken Broth and some BBQ sauce to give it some zing, green onions and chopped broccoli) and peas.
..there's hash brown casserole leftover that was yummy, think I'll just have a BIG burger with it :-)
Back ribs with twice baked potatoes
Tonight is Leftover Pasta with Cheesy Garlic Naan, trying to clean out the fridge to prepare for our first shop in weeks. I will need the room as my aim is for once a month shops going forward.
Waldorf all gone, so is lasagna and the stew....sigh.
So earlier today I sauteed up 10 frozen burgers ( a Sobeys Compliments brand ), and then placed 4 decent thickness eye of round peppercorn coated steaks in the same pan ( after removing the cooked burgers) .
Tight lid on and slow simmered with onions and then much later I added thick slices of spuds and dumped in the leftover gravy from the stew. Yummo was the result!
Making a Noodle bake. Boiling a mixture of different pasta, making spagh sauce with meat, onions, celery, garlic and some chopped red pepper. Mixing everything together and topping off with Mozza cheese and baking this for 30 minutres. Also will bake some frozen baguettes from Costo.
Most of my great stockpile of cheese bars are gone!! gah!!!
I blame the darn Dr. Poon diet I was on a while back...I was not eating ANY back then. That changed.....nom, nom, nom...plus the family never stopped indulging...oh well at my next shop I'll have to grab a few bars.
I feel like making a meatloaf now, yep! That is the choice for today.
