Thanks for the suggestion @SassyAshley :) We will definitely roast them. I have a pile of parm cheese to use up that I found on clearance at SDM.

Mom wanted Chicken Wings so I will have BBQ Chicken Chunks which I am going to turn into Chicken Cesar Wraps and we will both have Roasted Potatoes
We have 4 little boys over for dinner so an oven meal it is-Ham, spaghetti squash, raw veggies, noodles and rice pudding for dessert.
Steamed eggs with spicy garlic sauce, rice, veggies (probably stir-fried napa), and almond cake for dessert

Yesterday pan fried pork chops with onion, garlic, worcestershire sauce, S&P, etc and made an alfredo penne pasta with baby scallops...there's some pasta leftover so going to bake chicken to go with it ...
