    Not feeling for something elaborate so it will be mccain pockets pizza and patatoes patties or patatoes wedges will see for the dessert.
    The goal is to live day by day not to much thinking hahaha !!!!

    Yesterday I poached chicken breast and made a small dipper of chicken & rice soup (from the stock I made earlier in the week) there's a bit of soup leftover today and will make quesadillas this evening with the leftover chicken

    * Poached chicken breast are tasty & versatile, I do this on a regular basis. All you need to do is put thawed b/s chicken breast in a single layer in a pot, cover with chicken stock & add dried herbs of your choice (just a little) and a bay leaf (a must!) bring to a rolling boil and then partially cover the pot with a lid, turn down the heat to low and simmer for 10 mins. Then turn off the heat, cover the pot and leave in the hot liquid for 20 mins. Delicious for chicken salad, add to soups, etc, etc. If you don't have chicken stock you can use water, onions, garlic, etc but the chicken doesn't taste as good

    Tonight we will have a Taco Bake, I am going to add some mushrooms and red peppers to the homemade Taco meat to add some veggies. I might make a Salad on the side, we will see

    Yay it is finally friday!!! Probably coconut shrimps with sweet and sour sauce,bistro express rice and yogurt with fresh strawberries because I forgot those and need to be eaten lol!!!! Happy friday everyone!!!

    I'm itching to make up something new, but will search through the freezer contents for a meat source first and then build from there. Mystery dinner at this point.

    Probably since I go to the grocery this afternoon I will grab a french baguette and have it with chicken cranberry spread and cheese!!! Simple but so good!!!

    Leftovers for today!! not much cooking...and I have a small wheel of brie to bake in the oven later, drizzled with honey and a few chopped walnuts, served with crackers and a big glass of ice cold sauvignon blanc Have a great Saturday everyone!
