Decided to treat ourselves to Pizza
Its only +9 and lots of wind & rain today so will definitely make use of the oven and probably cook a roast and have been wanting to make lemon crumble bars & a lemon blueberry loaf so will probably make that as well later
Very late tonight I'll be making 24 of Rachael Rays version of Cannelloni. I have prepped the 8 full sheets of fresh lasagna noodles by cutting each of them into 3's. I'll par boil them, then add the ricotta/spinach filling and roll them up to go into the waiting sauce. This will be for a special meal on Tuesday.....DD doing a very short visit, and we are thankful of her dental appt. for this visit.
Mom made Beef & Broccoli in the Slow Cooker and I made Rice in the Instant Pot. It was okay not my favourite version of Beef & Broccoli
The Cannelloni is all made, we're having that meal very late tonight. Baked up a fresh lemon blueberry loaf this morning for DD. One of her favourite's, so maybe she can take most of it with her when she goes back to her place.
Took BLSL chicken out of the freezer so will have that with rice, green beans and salad. Simple. And using stuff up in the freezer.
Yesterday I wanted something lighter so I made Quesadillas with Cheddar, Taco Meat, Mushrooms, Onions & Peppers with a Caesar Salad on the side. I feel like it was a weird combination but it was really good.
Tonight is still a mystery.
was supposed to bbq yesterday but wasn't in the mood so made a chicken pot pie (bought pie crust) with leftover chicken in the fridge. Will bbq chops later, couldn't find mangoes at the grocery store so will make a peach salsa instead and see what other sides later! :-)

I completely lost track of time today, all of a sudden looked down and realized it after 5 pm, I thought it was like 3 pm. So quick and easy it is, Breakfast for Dinner = Waffles
Tonight we had home made waffles, leftover roast ham, and strawberries.
Today our Canada Day main meal will not be a BBQ ( :hahaha:shocker! ). Instead I turned 16 chicken thighs into Chicken adobo. The request was in, so why argue with what the guys preferred for dinner? Anyhow, this time I made a double batch of the liquid
( sauce? ) that the thighs stew in because we all love a bit extra drizzled over the rice.
I made this between 3 a.m. and 5:30 a.m. along with yet another loaf of crusty white bread.
Enjoyed a much needed nap after that.
BBQ steak, potatoes, garlic bread and veg.
I have a lovely pot of beef stew simmering on the stove on this cold, rainy, windy day!
