I got some mini tortillas on sale for 50% so I was going to make Mini Baked Tacos but as the sun went down the sinus pressure increased. So instead just did Nachos with melted cheese with homemade taco meat from the freezer and toppings of choice. It is what it is
Made my first batch of poblano peppers and turkey pasta. Mine turned out extra spicy because I misread the ingredients list which called for a single Tblsp of a cumin/chili mixed. I added a full tblsp of each.
Still, it is so darn delicious. ty @Lynn49 for that recipe.
not sure yet-but I just whipped up a pot of cauliflower soup so that will be lunch. Heading over to my SIL's for Scrabble-she has some bread rising so sounds like a lazy, fun day.
Tonight I am going to make Spinach & Ricotta Pasta Bake and probably some Cheesy Garlic Naan on the side.

Last night dinner did not go as planned since Mom had Breakfast @ 3pm, she was not hungry so I just ate a plate of fries.

Change in my dinner plans for tonight, I was going to make a Roast which I picked up today but it is not done so quick pivot and instead I made:

I boiled up some Schneider's all beef dogs and regretfully succumbed to enjoying one slathered with mustard.
Now my tummy is seriously asking me why I did that? The guys can finish off the rest, they have cast iron stomach linings.
I am making breaded pan fried pork chops and mashed tatie/rutabaga mix.
Tonight I am experimenting with something that I'd love to place on the Christmas dinner table, but the price of those silly cured ready to eat hams has gone nutso so I've been putting it on hold until now!
Managed to catch a bit of a discount this week buying a WM, Great value brand for $10.00. ( that will be the Christmas one )
This morning found a small 550 gram ham hiding near the bottom of a freezer which is fine to use for tonight's practice run.
Anyhow, this is what I'd like to do.
Cut the ham into 1/2" slices and place them in the air-fryer, watching them closely, turning if needed. Removing and placing them on paper towel. Then putting slices of canned pineapple into the air-fryer, same thing watching closely, turn if needed.
The reason is I want these slices to be devoid of as much moisture, without being " dried out ".
Then on a parchment lined baking sheet I will cut circles of phyllo pastry the same circumference as the ham slices, baking them all lightly browned and crispy. I plan to layer the circles of ham, pineapple and baked phyllo circles together with a phyllo circle on both the top and bottom of my tower.
Now I want to lay the roll over and place it on a large uncooked sheet(s) of phyllo, then roll it up!
In my mind this seems like it will be awesome once the outer pastry bakes, browns and crisps up flaky.
I thought it could be an alternative to the same old, same old ham platter with pineapple on the side.
If it works I'll boast and post a pic....if not I'll be licking my wounds and giving myself an " atta girl " for trying.
Update: It's not looking like a success so far, I should have used Puff pastry. I've done this before, mixing the 2 up. Well at least it's all together and waiting to be baked. Just waiting for the guys to be hungry enough for dinner as this is only nice when it's fresh right out of the oven.
Tonight will be fish and veggies-sounds rather healthy!
