Roast chicken, baked taties and veggies
Tonight, plain old juicy homemade hamburgers with mustard, relish, tomato and lettuce.
Last night I made Sausages (some Grill'em I had in the fridge that needed to be eaten up) baby smashed potatoes with Olive Oil, Salt, Pepper, Garlic and Onion with Roasted Cauliflower. Not bad for dinner alone.
Tonight no idea yet, may have to get creative when I get home as it doesn't sound like mom is too motivated today. May have to find something super quick but warm and comforting, just that kind of day.
No room in the freezer so had to throw a roast in the slow cooker at lunch. I may eat tonight with mashed potatoes since I have been craving them and they aren't on my meal plan at the moment lol Will slice up the leftovers for the freezer to make hot beef sandwiches with sautéed peppers and onion on the weekend.
I stuck a roast in the slow cooker this morning, so will prob just have some smashed potatoes and other veggies with it (maybe Stove Top) , make a gravy..
spaghetti with meat sauce & spinach salad.
I am also very lucky as my wonderful apple picking neighbour has made me an apple crisp...just need some ice cream and/or whipped cream.
Tonight is BBQ'd porkchops, some sidekicks noodles, carrots 2 ways (dd1 likes them uncooked, dd2 likes them cooked - oy!). i'm going to have some bbq'd asparagus too.
BBQ asparagus is so good! So jealous. Dinner with probably be something involving a cucumber. I have 3 in my fridge because I keep buying them and forgetting that I already bought one. Will probably have a protein from my freezer, I'm running out of space in there.
Healthy as hell low cal dinner. 267calories.
Cheesy bake spaghetti squash with spinach and homemade cheese sauce. Boiled carrots. Crispy cauliflower cheese bread.
Edit to add. For dessert I made Rice Krispies squares with the gluten free Rice Krispies.
Dinner and dessert under 500cal.

We couldn't figure it out; had raw chicken in the fridge, but we were feeling hungry and lazy so we went out. On the bright side, I only ate half my entree, took the rest home. On the not so bright side, I washed down what I did eat with two glasses of beer!
we made chicken wraps; tortilla shell, smear cream cheese on, some basmati rice, cooked chicken, bacon, mixed salad greens and ranch dressing.. yum
We went to BP for their 1/2 price pasta Tuesday. It was "free" because I paid for everything with 2 gift cards that I traded for. Dh had chicken and mushroom fettuccine with Dr. Pepper. I ordered their new pulled pork penne. I ordered it without the green onion (so 2 types of onion, instead of 3) and switched out the pasta for fettuccine. It was all pretty good. Even better just to get out of the house for free. LO ate food off our plates.
Its suppose to be a beautiful day (in the high 20's) so I am bbqing prime rib this evening, will prob just nuke some potatoes and have them with butter & sour cream, etc (I do have some bacon, cheese & green onion on hand, maybe I should scoop them out and make like a loaded potato and finish them on the bbq) or make a salad & cook up some mushrooms & onion, etc
I have to work for a few hours this evening so I bought a take and bake deluxe pizza from sobeys for dh and the kids to make tonight. never had 1 before, looks pretty good though.
I made taco soup in my crockpot overnight, that's tonight's supper. Will have it with shredded cheese and broken nacho chips on top! :) No beer though.
Supper today will be real easy. Every second Wednesday i volunteer organize Military Whist for the elderly and i also provide sandwiches, crudities (raw vegies) and dip, dessert, coffee, tea, etc. We finish about 4:00 and then eat. I get $30 for buying and making the food. So thats what we are having for supper tonight. I dont provide the food all the time. Next time it is someone elses turn. And i will just organize the game.
I put the crockpot on around 8 last night, then woke up around 3:30 and turned it off. Came down at 6 this morning and took it out of the pot and into a glass dish (still fairly warm) and it sat on the counter until about 7. A food safety expert would probably have a heart attack, but I've not killed or even sickened anyone yet! :)
Thx, Zonny, I just was curious. I'm no angel when it comes to food safety, either, and we're all alive!
Someone pasted a picture of Apple Fritters and their recipe but i cant for the life of me find it. I would like to try this. Can anyone find it for me?
Last night we had pizza, I went home and went to go get everything needed to make pasta out of the stockpile when mom announced she was ordering pizza. Hopefully one day I can break this take out habit.
Kind of drives me insane, mom can eat pizza once a week and I get sick of it long before she does.
Tonight, who knows we will see when I get home. I am thinking pasta but we will see once I get home.
For once I'm actually stuck on what to have for dinner. I really want roasted sweet potato and spinach salad but not sure what to have with it. DS will only eat the sweet potatoes from the salad he doesn't like raw leafy greens.

Most likely it will be a repeat of last night which was a huge green salad(filled with MIL's garden fixins') with a few Janes chick strips on top as requested by DH. I also have a ton of eggs so a quiche is in the works soon. Even though my sciatic is on fire I will try and make those blueberry cinnamon rolls that I was planning on making for Tuesday since the girls at DH's work are begging me :)
Spaghetti and Sauce OR Spice Rubbed Pork Chops (Paprika, cumin, Worcestershire sauce, Brown Sugar) with Green beans.
Oven baked chicken thighs with Kraft extra thick and rich original BBQ sauce on it. Not sure what with. Maybe fried zucchini with garlic and some cherry tomatoes (from the garden) thrown in at the end. Have it all with pasta?
We had a thunder storm last night, so I'm a little hesitant to raid the garden to make a salad (too muddy).
edit: was given about 10 larger pickling cucumbers, so I peeled one of those to add to supper. It was pretty good too.
