Tonights menu consists of stuffed pork chops, whipped potatoes with chives and balsamic glazed carrots (my favorite).

Made the late night thing for the guys. Sauteed the skinless, boneless chicken thighs nice and brown then added 1 bottle of VH Orange Ginger sauce and about 1/3 bottle of the Hoisen one. Covered and let that simmer till the rice was cooked, and served with steamed savoy cabbage.
2023 had better show some promise or else!

Tonight I'm going to try to do a deconstructed shepherd's pie of sorts...meatballs, carrots and peas cooked in a a kind of gravy (basically the liquid ingredients needed for shepherd's pie) and cheesy mashed potatoes. The bf wasn't a fan of the last shepherd's pie I made, which is kind of bad because I ate the rest of the pan! He likes meatballs and mashed potatoes though!

Just finished up, we had tacco's. It is such a fast easy meal, and now I have another free bag of cheese to pick up and throw into the freezer
