Parents coming over for dinner and we're making a pita pizza buffet, like when I was a kid and we'd make our own pizzas on english muffins :) daiya cheese for my Mom, lots of veggie toppings and a few meat options (chicken, turkey pep, regular pep) for the carnivores.
Dessert is a diabetic chocolate cake with cool whip/vanilla pudding topping and fresh berries - slightly modified from the recipe harbie posted in the "last thing you baked" thread a month or two ago.
Deciding between ordering pizza or having canned soup....

We had steak too, TudorChick.
Ribeye, bbq'd chicken drumettes, couscous, grilled zucchini and veggies with cheese sauce. The sauce looks a bit anemic because I used marble cheese, couldn't be arsed to open the new package of cheddar.
The zucchini is so easy to prepare on the grill. I season it with a bit of salt, pepper and thyme and also a splash of Kraft Golden Italian salad dressing. Grill on both sides and then brush with Kraft Chicken & Rib BBQ sauce. It hardly takes any time to cook, probably 2 minutes on each side.
A member asked about the zucchini stirfry recipe so I'll post it here too...Chop up all your veggies. Heat a pan with some canola or olive oil and a wee bit of butter, fry the onion for a couple of minutes. Add the zucchini, fry couple of minutes and then add the peppers. Season with salt and pepper. I add a bit of this and that to round off the seasoning: a touch of sugar, a bit of chicken bouillon powder, some dried thyme, a dash of soy sauce and a squeeze of lemon juice. Last thing is to toss in a bit of fresh chopped parsley. The trick is to only cook it to the tender-crisp stage, overcooking will affect the texture. HTH
last night I had more baked stuffed scallops. This time with snow peas sauteed in butter with garlic and a sprinkle of seasoning salt. I was going through my freezer last night and found a couple more of the walmart black angus steaks, lol. So I'll use those tonight with more corn on the cob. :)
