Tonight is garlic mashed cauliflower and crispy homemade tofu fingers, I will also do some steamed asparagus
Just rolled out 18 tortillas - will be frying them then using them for chicken enchiladas. Making the tortilla dough is a piece of cake but rolling them out takes time. But they taste soooo much better than store bought and just cost pennies to make yourself.
So tonight chicken enchiladas and coleslaw (home made too).
for lunch, i did whopper wednesday
and dinner will be leftover lasagne.
Tonight is chili that I made on the weekend with homemade biscuits. Is it bad that I have been looking forward to this since Sunday? LOL! I guess we all need something to look forward to no matter how small and unimportant it might seem...My favourite winter food is chili with lots of hot sauce!
For lunch it was quiche with a salad

Tonight was beef stew with homemade tea biscuits.
late night for DD, so she came home to fresh baked GF pizza. Used Bob's Red Mill GF Pizza this time, chili I made earlier as the sauce topping, added caramelized onions and garlic, pineapple, fresh spinach leaves, and easy on the mozz.
Last night's supper was hm... asian-inspired, I suppose... stirfried onions, celery, carrots, mushrooms, cauliflower, broccoli, water chestnuts and strips of pork loin, ended up making it saucy, though, like for chop suey - served over oniony-beefy rice. Yum!
Last night I made beef short ribs with smashed potatoes and roasted carrots with a balsamic vinegar glaze.
I'm making a special dinner for dh tonight. Most people go out for valentines dinner, but I want to make him something special to let him know how much I love and appreciate him. So I'm making a few of his favorites. I'm going to grill up some rib eye steaks, and make some coconut battered shrimp to go with the steak. Then I'm going to do some twice baked (or stuffed as some people call it) potatoes, some brussel sprouts roasted with garlic and bacon, and some home made roasted garlic and 3 cheese biscuits to round it out. Then for dessert, I'm making a 4 layer chocolate cake (I'm really happy that's its not to hot today as the oven will be on for a long time :) ) Lots of his favorites. It's a lot of food for one meal but we can have leftovers tomorrow for dinner or lunch or something :tongue:

we are making a homemade pizza tonight & staying home. Loocie is feeling a little bit under the weather.

I usually cook a meal at home for V-day, but I think tonight will have to be takeout.
