Indian Tomato Soup
Aromatic, creamy and delicious. Our version will become your favourite tomato soup.
Serves: 6
Preparation Time: 15 minutes
Cook Time: 15 minutes
Indian Tomato Soup
1 Tbsp. (15 mL) Olive Oil
½ cup (125 mL) Yellow onion, diced, about 1 small
¼ cup (60 mL) Celery, diced, about 2 small ribs
¼ cup (60 mL) Carrots, diced
1 can (796 mL) Diced Tomatoes, undrained, 3 ½ cups
1 jar (341 mL) VH® Butter Chicken Sauce
1 cup (250 mL) Low Sodium Chicken Broth(i used half the container)
Per Serving: 268g (Serves: 6)
Heat the oil in a medium saucepot over medium heat. Add the diced onion, celery and carrots and sauté until soft, about 5 to 7 minutes.
Add the tomatoes with their liquid, VH® Butter Chicken Sauce, and chicken broth. Bring to a boil. Reduce the heat to low and simmer, uncovered for 5 minutes.
Remove from the heat. Puree the soup in a blender. Serve hot.
Tips:
Try garnishing the soup with whole wheat croutons and sliced green onions.

Spinach pizza happened :) So glad I made the effort to go shopping because I have wanted a spinach pizza for a week! We usually do them with the tostitos spinach dip as the "sauce" but I couldn't believe they wanted 4.79 for a jar of that stuff at the grocery store! I bought a container of spinach dip that was in the veggie section with all the veggie dips. It was 2.99 and just slightly smaller in size than the tostitos jar. It's a bit thinner with less spinach and things in the dip itself so I just piled on more of the fresh spinach when I made my pizza. So good and works out to around .83 a pita pizza!

I grilled ribeye steak, served with baked potatoes and salt & pepper shrimp. Marinated veggie salad on the side.

My homemade rice soup ! It tastes so good ! I made enough for 7 big meals ! I also paid less than 1$ for all the ingredients so almost .15$ per meal ! :)

Last night was Mennonite sausage with onions, beans, and mixed veggies all mixed in with macaroni - simple, but yummers!

Loaded the crock pot at 6AM....potatoes, carrots, mushrooms, onions & a roast of beef. Perfect after skiing today & at work tomorrow.

I have a whole chicken out so tonight I'm going to make a roast chicken dinner with all the fixins (and hoping I can spoil my tiny Maggie with a bit of it :( )

Sunday Night Dinner (something we used to always have before someone had to go home, it was after Sunday night dinner that either me or bro went home depending on which house we were at that weekend), but as we got older this traditional stopped. Tonight is just me and mom but thanks to Freshco for having Whole Chickens on sale we are having:
Whole Roast Chicken
Potato Stuffing (Leftover from Christmas, OH I :love: this stuff)
Gravy
Potatoes (Not sure how we will make these but I am thinking Mashed)
Candied Acorn Squash
And maybe another veggie, depending on what I find, gotta do a little freezer clean up today.

A beautiful day here so I will barbecue moose steaks (marinating in teryaki sauce), light stuffed potatoes and a strawberry spinach salad.

whipped up a quick lasagne loaded with the veggies in the fridge that are about to turn, a 1/2 pound of ground turkey, a can of tomato sauce spiced up, oven-ready noodles (love those!), some mozzarella and a little parm. I think I did pretty good for about $6... I'll get the fiancé make salad to go with it.
