I had some fillings replaced at the dentist, so it was mashed potatoes for dinner. They said I could eat whatever, but the pain stopped me from having anything I had to chew. Think I'll try making that soup tomorrow that KelJo made.

^ the papillote is more like a potato packet than a soup...all the ingredients go in a tinfoil packet lined with parchment paper...I made 3 packets and cooked for about 35 mins on the bbq before I opened and added the cheese, zest, etc...still really yummy.... (I made a lil' one for my grandmother to try :) ) (If you're feeding guys I would also serve it with a protein, it's a really nice light supper with bread & a glass of wine )
it's suppose to be a beauty day, I'm hoping to bbq some chops this evening and making mango salsa ( at $1.99/mango I hope it's all eaten :) ) and will prob just grill some veggies/potatoes and baguette to go with it ..maybe have dinner on the deck if its nice enough :) .

I made spanakorizo last night since I have WAY too much rice due to that Uncle Ben's 2 x $4 chicken offer. Yeah hardly put a dent in my supply!
And I will also do a spiralized zuchini, grape tomato, feta type salad with some sort of vinaigrette dressing.
Italian sausages, mashed potatoes, spinach, and mixed greens salad from my patio garden! Amazing enough, we`ve had 8 cherry tomatoes from our hanging tomato plant!
Right now there is a large multi-family garage and bake sale taking place in my driveway. It is a fundraiser that has been held at our house for the last three years. Too bad it is so cold outside.
Tonight is our friend's birthday party BBQ. The birthday girl requested that I make my baked cheese loaf, which I will bring over tonight. There will be hamburgers, salads, etc. along with birthday cake. I'm glad to not have to cook supper tonight, just have to bake my specialty. :)
Tonight we are trying Salmon, I have had it a couple times at my Dad's but my Mom normally does not eat but wants to get fish in her diet. So Balsamic Glazed Salmon with Rice and Roasted Asparagus .
We were going to have Cornish hens on the BBQ but the weather isn't to good right now (much needed rain) so I made a rice stuffing and put them in the oven with carrots and cauliflower. We'll also have a Caesar salad and a glass of white wine.Attachment 283698

My zucchini concoction was a big hit at the potluck! I got many compliments on it  We also had some very juicy bbq chicken and also salmon. And ended the night with a custom carrot cake in honor of my mom's recent Masters degree. So proud of her :clap2:

She kept the Post-It people employed by using probably a million of those sticky flags over her school career! Always a stocking stuffer for her.
