I just caramelized very thinly sliced onions with shiitake mushrooms, thyme, and a splash of white wine. I'm going to add it in a casserole dish with cut up cod and a can of mushroom soup. Top it off with some grated cheddar cheese and bake it until the cheese is bubbly and the fish flakes with a fork. I'll make some rice and either salad or steamed asparagus to go with it.
And I can never make caramelized onions without "testing" it like 10 times. It tastes so good.

oven baked pork buttons and stir fry veggies. Was supposed to be sweet and sour but was in the middle of cooking them when I realized I had no ketchup. Bummer.

That sounds soooo good! I bet it would be good for breakfast, too.
Last night I "made a silk purse with a sow's ear". Leftovers and leftover leftovers. The chicken quesadilla was from the Templeton Cafe Thursday night and the orzo was pretty good third time around. Fresh veggies, of course. Oh, and some chutney and Costa Rican salsa sauce.
