So change in plans last night, Mom was supposed to work but they moved her shift to today so she was home for dinner. So instead I made Sausage on a Bun with Chips & Dips. The veggies were Veto as we did not really have much other than carrots that would go with Dip and Mom says she needs the carrots.

I decided to make beans and rice from scratch instead of the packaged ones, so they are on tap for tonight.
Going to grill some pork chops with mango BBQ sauce and if I feel ambitious a mango salad too.

I had two re-fill requests over the weekend so planning to make a double batch of hot sauce.

@Mechman47 do you have a recipe for your mango bbq sauce or is it a bought sauce? I love mango! they're fairly expensive here but when they do go on sale I usually make a mango salsa to go with bbq'd pork---yummy, so good!! I'd be curious to try the bbq sauce as it goes so well with pork

Short answer is no. Working on it is more the answer.

Made one for the kids "keto" no sugar, principles were good except the fact it had no sugar. BBQ sauce needs to burn.
Purchased a couple of "specialty" ones while visiting back to the Big Smoke.

One was much too mustard based for my taste, but good with ham. The other is a mango curry, still working with that one.
Thinking I may try something with the curry slant myself.
My homemade hot sauce is scotch bonnets and mango. So looking for a compliment.

I made " stuff " for whenever the gang gets up.
Pressure cooked up 7 small pkgs of meaty beef ribs that were marked down at Metro this a.m. Oh my, how good are those?
The doggies benefited too as they each got a big long bone and I left a smidgen of meat on them.

Roasted, ( kind of ) but in a giant pan that had leftover oil in it from making a batch of fries yesterday. I laid in a bag of those small fancy multi coloured spuds, when they were halfway soft and getting browned I added other stuff to the pan, lots of mushroom caps, chunks of red and green pepper and uncut long green beans.

Then I oven roasted 2 pans of other items, cauliflower " steaks ", zucchini slices and a whole pkg of baby bok choy.
Mmmmm..... I sure love roasted veggies!

Was so good to have made and eaten a real, full, home-cooked supper!

I was able to prep it all, husband did the ovening(?) and BBQing.

BBQ chicken thighs with Guinness sauce, oven-baked potatoes and onions in onion sauce, buttered carrot coins, raw cauli and carrots with Greek dressing.

It was all SO good! I got the high protein I must have without zillions of calories from restaurant good and so, so much better tasting! Son came over as well, do he got fed and will take leftovers home.

My husband is off works for two weeks so, with his help, we are going to be doing lots of cooking and hopefully some baking.
